Fast-Food saudável *Healthy Fast-Food*

Ando a tentar esvaziar o frigorífico e ao mesmo tempo deu-me uma vontade irresístivel de comer comida-de-plástico-fast-food-pseudo-jantar :)

Tinha aberto uma data de latas/garrafas diferentes disto e daquilo e tinha também restos de molho de tomate no frigorífico, que eu não queria que se estragassem. Para mais, eu não posso congelar os restos (obviamente!), então decidi fazer uma pizza com tudo!! Acabou por ficar bem e estava bastante saborosa!! Além de que era uma pizza bastante saudável, massa feita por mim, o molho de tomate era feito por mim e era vegan!


Agora, tenho o frigorífico vazio e a pizza desapareceu num instante! Yummy!

No outro dia senti vontade novamente de comer qualquer "porcaria", do género hamburguers e batatas fritas. Então pus-me a abrir os armários e a tentar ver se conseguia fazer uma versão saudável de hambúrguers com aquilo que tinha por aqui. Acabei com uma receita super fácil e rápida de hambúrguer de grão, com batatas "fritas" no forno e salada a acompanhar! E o que sobrou do ketchup ;)



Os hambúrguers são realmente fáceis e rápido de fazer, e podem ser congelados, mas também podem ficar alguns dias no frigorífico antes de serem cozinhados e são óptimos para levar na marmita para almocar no trabalho!

Trying to empty the fridge and craving for junk-fast-food-type-of-dinners :)

I opened a few cans/bottles of this and that and had some tomato sauce leftovers in the fridge, that I did not want to go to waste. On top of that, I cannot freeze things (the obvious!), so I decided to put all together in a pizza!! It turned out pretty ok and very tasty!! Plus, it was the healthy kind of pizza, homemade dough, homemade tomato sauce and vegan!






So now, the fridge is clean and the pizza is gone! Yummy!

The other day I felt again the need for some junk food, like burgers and fries. So I opened my cupboards and tried to see what I could use for some healthy version of burgers. Ended up with an easy, fast recipe of chickpea burgers, some oven-baked "french" fries and salad on the side! And what was left of the ketchup ;)




The burgers are really fast and easy to do, you can freeze them, but you can also leave a couple of days in the fridge before cooking them and they are great to take to work for lunch!

Receitas: soupa, ketchup & mais algumas *Recipes: soup, ketchup & some more*

Já há uns tempos que não tenho escrito nada, mais por falta de tempo do que por não ter cozinhado! Tenho andado ocupada, tanto com o meu trabalho, como com as minhas aventuras culinárias e novas receitas saborosas!

Comeco com as sopas.Sopas, sopas, sopas! Como já tinha dito num post anterior, tenho sempre pelo menos duas sopas diferentes no frigorífico, que vou alternando! Adoro sopa, tão simples de fazer e consegue ter um sabor tão bom, uma textura aveludada e cheia de nutrientes e mega saudável! Adoro sopa!!

E como não posso congelar e não quero desperdicar nada, partilho a minha receita de sopa feita com talos de bróculos e de couve flor, cebola e um pouco de arroz. Adicionei também uma mistura de ervas secas para sopa, que tinha comprado numa quinta na Noruega, uma vez que fui lá passear. Uma senhora muito simpática que a ocupacão dela é plantar, apanhar, secar e vender mistura de ervas aromáticas para uma variedade de coisas, como chá ou sopas! Esta mistura de ervas aromáticas para sopa é fantástica.  E a receita de sopa não pode ser mais simples (os restos de uma cabeca de bróculos e de couve-flor dá para cerca de 4 pessoas):

Receita
Aproveitar os talos de bróculos e de couve-flor, que costumamos deitar fora. Retirar as partes mais secas e cortar aos bocados. Colocar na panela com uma mão cheia de arroz e cobrir com água a gosto (conforme gostem mais de creme ou mais líquida - eu prefiro mais cremosa, coloquei água apenas a cobrir os legumes). Deixar cozer cerca de 25-30 minutos e passar com a varinha mágica ou robot de cozinha! Cuidado, que esta sopa dá "luta" a passar. Os talos, mesmo depois de cozidos, são bastante rijos, por isso passem a sopa com cuidado! Depois de passada, adicionar sal q. b., um fio de azeite e 1 c. sopa de mistura de ervas aromáticas (podem usar só salsa seca, se não tiverem outra coisa) e deixar cozer mais 5 minutos. E está pronta!! Uma sopa nutritiva, saborosa, feita com os restos que normalmente vão parar ao balde do lixo! #DesperdícioZero



Podem adicionar cenoura, ou nabo, ou cebola, ou o que gostarem ou substituir o arroz por batata, mas com arroz temos uma sopa sem glúten, boa para quem sofre de intolerância.

Inspirada por um blog de #DesperdícioZero, tenho andado a fazer e a mudar hábitos que me levavam a criar mais desperdícios. Um deles era comprar chá em saquetas, embalagens individuais e caras que iam, invariavelmente, parar ao balde do lixo, ao balde do lixo de plástico e ao balde do lixo de cartão... desta forma, consigo fazer o meu chá com as especiarias que compro ao peso e guardo em frascos de vidro que aproveito de conservas, o chá preto também compro ao peso, aproveito cascas de laranja, clementinas e limões, tudo orgânico, que deixo a secar à janela e depois é só juntar um bocadinho de tudo, colocar num frasco e temos uma fantástica mistura de chá, agradável para dias de chuva e se fizerem ice tea, refrescante para dias de mais calor! E é SUPER barato!! No entanto, a receita não é minha, vejam aqui, muito simples!



Aconselho a darem uma olhadela pelo blog, tem dicas muito boas de como podem reduzir o desperdício no dia-a-dia e podem também participar em webinars (tenho andado a fazer parte de alguns), onde conhecem a autora do blog e podem falar com ela.

A semana passada enviei a minha receita de dois patês para a Sabores Partilhados, que é uma "Revista digital dedicada à partilha de receitas de autor pela mão de bloggers especializados no assunto." Já publicaram a minha receita de sopa de beterraba, com vinagre balsâmico e manjericão, na Revista Sabores Partilhados nº23, disponível aqui. No entanto, como não fui a tempo para a edicão dos patês (que tem receitas muito saborosas), partilho aqui as receitas:

  • Patê de tomate, com alcaparras

    Ingredientes: 
- 2 c. sopa de amido de milho 
- 1,5 xícara de leite de soja 
- sal e pimenta a gosto 
- 1 c. sopa de massa de tomate 
- 1 pitada de acúcar (opcional, eu não usei!) 
- 2 c. sopa de maionese 
- 2 c. sopa de alcaparras 

           Preparacão: 

Dissolver o amido de milho no leite e levar a ferver num tacho, em lume médio, mexendo sempre.
Tirar do lume e juntar a massa de tomate e acúcar (se usarem), mexendo sempre até arrefecer.
Juntar a maionese e misturar bem.
Envolver as alcaparras.  

  • Patê de azeitonas pretas, com alcachofra e azeite aromatizado de pimentos picantes

    Ingredientes: 

     
- 300 g de azeitonas pretas sem caroco 
- 90 g de azeite (usei um que aromatizei com pimentos picantes) 
- 1 c. sopa de óregãos 
- 1 dente de alho 
- sal q.b. 
- 2 ou 3 alcachofras (de lata), a gosto

           Preparacão:


Num robot de cozinha picar o azeite com o alho. 
Colocar as azeitonas e picar até obter uma pasta. 
Juntar os óregãos e sal e picar mais um pouco, cerca de 30 segundos. 



Colocar no frigorífico pelo menos 1 hora, antes de servir. Acompanhar com pão, tostas, bolachas de água e sal, ...

Por cá anda o Street Food Festival. Quis ir, mas apanhei gripe e fiquei com febre de cama, depois o tempo ficou tão seco que desenvolvi alergias e uma conjuntivite alérgica e, para ser sincera, estava frio e não me apetecia muito andar a procurar roulottes vegan. De certeza que havia uma ou outra, mas ultimamente não me tem apetecido experimentar nada fora de casa... e como sobraram os ditos patês, aproveitar para usá-los e fazer a minha versão de kebab vegan!! Até a maionese fiz.

Receita de maionese
(Dá para 4 pessoas)

Ingredientes: 

- 100g de leite de soja
- 1 pitada de sal
- 1 c. chá de alho em pó (opcional)
- 200 g de óleo vegetal (dividi 1:1, óleo de amendoim:óleo de girassol)
- 1 c. sopa de sumo de limão
- 1 pitada de acafrão

Preparacão:

Colocar tudo no liquidificador, excepto o óleo e misturar bem, cerca de 1 minuto. Verter lentamente o óleo ao liquidificador e adicionar o sumo de limão. Misturar até obter a consistência pretendida. Mais fácil não poderia ser :)

O pão pita foi do LIDL, opcão vegan. E para o recheio, cortei seitan em fatias finas, deixei a marinar cerca de 4 horas, no frigorífico. Os ingredientes da marinada foram estes:

- 2 c. sopa de azeite
- 2 c. sopa de sumo de limão
- 1 c. sopa de molho de soja
- 1 c. chá de alho em pó
- 1 c. chá de paprica
- 2 c. chá de menta seca (ou hortelã)
- 2 c. chá de cominhos em pó
- 1 c. chá de tomilho seco
- 1 c. café de pimenta em pó (piri-piri)

Salteei uma cebola picada em azeite e adicionei o seitan com o molho da marinada, em lume médio, cerca de 10-15 minutos até o seitan estar cozinhado.

Para rechear as pitas, coloquei no interior de cada uma delas 2 c. sopa de patê de tomate, 2 c. sopa de patê de azeitona, 1 folha de alface, seitan q.b. (até encher!), 2 c. sopa de maionese, 1 tomate cherry e umas rodelas de pepino! Foi comer e chorar por mais!! Mal posso esperar para fazer novamente! E é uma óptima maneira de não deixar estragar os patês no frigorífico.

E com estas coisas de Street Food e maionese só falta o ketchup, certo? :) Já não falta, porque entretanto também fiz! Aproveitei o resto da pasta de tomate que usei para o paté e fiz um ketchup que me vai fazer nunca mais comprar ketchup no supermercado. Adorei!!! Só me faltam umas batatas "fritas/assadas" no forno e um bom filme! Melhor que pipocas


Receita de ketchup
(Dá para 1 frasco)

Ingredientes:

- 2 latas de pasta de tomate (usei as do LIDL)
- 1 c. sopa de xarope de macã e 1 c. sopa de acúcar de coco (usei 1 c. chá de xarope de agáve e 1 c. chá de mel)
- sal a gosto
- 1/4 c. chá de canela em pó
- 1/4 c. chá de alho em pó
- 1/4 c. chá de gengibre em pó
- 1/4 c. chá de allspice
- 1/4 c. chá de noz moscada
- 1 ou 2 bocados de cravinho
- 1/2 xícara de água
- 2-4 c. sopa de mostarda (usei 1/2 c. chá de sementes de mostarda amarelas)

Levar a um liquidificador tudo junto e triturar bem até obter a consistência desejada. Guardar num frasco de vidro, preferencialmente esterilizado e levar ao frigorífico. Aguenta bem 2 semanas a 1 mês e também pode ser congelado, mas eu vou consumir o meu rapidamente!

Por último, que este post já vai longo... é para compensar o tempo que estive sem publicar :) e porque também a Páscoa está para chegar, é sempre uma boa desculpa para consumir chocolate! Mais do que consumir, aproveitei para participar num Cabaz de Páscoa, regras aqui, em que o cabaz consiste em chocolate de uma das minhas marcas favoritas de chocolate amargo de culinária, a Pantagruel!! Foi muito giro fazer este bolo e ao mesmo tempo tendo em conta que ele é saudável e saboroso! Eu já o provei... e claro que sou suspeita, mas está delicioso! As coberturas podem variar um pouco, usar chocolate branco para fazer contraste com a cor do bolo de chocolate, ou usar dois chocolates, um deles em raspas ou enfeitar com ovos de chocolate, ou frutos secos, por exemplo. Também pode ser adicionado um pouco de vinho do Porto ou Moscatel ou outra bebida à cobertura. O limite é a imaginacão!
 
 




 Bolo de banana, cenoura e chocolate

Ingredientes para o bolo:

- 4 bananas médias, maduras
- 1 xícara de cenoura ralada
- 225 g de farinha
- 100 g de acúcar amarelo (Sidul)
- meia c. chá de fermento biológico
- 1 c. chá de bicarbonato de sódio

- 1 c. chá de acúcar baunilhado
- 100 g de cacau em pó (Pantagruel)
- 230 g de leite de soja
- 200 g óleo vegetal (de girassol)

Ingredientes para a cobertura:

- 125 g de tablete de chocolate (usei chocolate preto de culinária 70% Pantagruel)
- 1 a 2 c. sopa de natas vegetais (Alpro)
- meia c. chá de canela em pó


Preparacão do bolo:
Pré-aquecer o forno a 180 C e preparar uma forma redonda de cerca de 22 cm, com margarina vegetal e polvilhada de farinha. Reservar.

Passar a farinha, o cacau em pó, o fermento e o bicarbonato de sódio por uma peneira, para uma tigela e reservar. Reduzir a cenoura e a banana a puré. Adicionar o leite ao puré e mexer bem. Adicionar o acúcar e o acúcar baunilhado e mexer bem. Adicionar esta mistura líquida à farinha polvilhada e bater bem até obter uma massa homogénea.

Verter na forma e levar ao forno cerca de 35-40 minutos.

Preparacão da cobertura:

Numa cacarola anti-aderente, em banho-maria, juntar as natas, o chocolate e a canela e derreter, mexendo de vez em quando, em lume baixo, até o chocolate estar completamente derretido. Retirar e deixar de lado a arrefecer ligeiramente.


Quando o bolo estiver frio, deitar a cobertura de chocolate por cima, por forma a cobrir o bolo. Enfeitar com amêndoas da Páscoa a gosto! Levar ao frigorífico para refrigerar!


Este vai ser #DesperdícioZero, não vai sobrar nada para a Páscoa!! :)

It has been a while since I posted something, I blame the lack of time and not so much not cooking! I have been busy, with work, my culinary adventures and new tasty recipes!

I start with soups.Soups, soups, soups! As I had said already in a previous blog post, I always have at least two different kinds of soup in the fridge, that way I can vary! I love soup, so simple to do and so tasty, a creamy texture and full of nutrients and super healthy! I <3 soup!!

And since I cannot freeze and I don't want to waste food, I share my leftover-broccoli&cauliflower-stalk soup, with onion and a bit of rice. I also added an herb mix for soup, which I had bought once in a farm in Norway, once I went there. A very nice lady plants, harvest, dry and sells really good herb mixes for a bunch of different things, like tea or soup! This soup herb mix is just amazing.  And the recipe couldn't be easier (leftovers from broccoli head and cauliflower are more than enough for a 4-person soup).

Recipe
Save broccoli and cauliflower stalks, which usually go to the bin. Take off the dry parts and cut in pieces. Put in the pan and add a hand full of rice and cover with water (I prefer more creamy soup, so I add enough water just to cover the veggies). Let it cook for about 25-30 minutes and blend until desired texture! But careful, this is not an "easy" soup to blend. The stalks, even after they are cooked, they are really hard, so blend the soup carefully! After blending, add a pinch of salt, a bit of olive oil and a Tbsp of herb mix (if you do not have it you can just use dried parsley) and let it cook for 5 minutes more. And it is ready!! A very nutritious soup, tasty, made with leftovers that usually end up in the garbage bin! #ZeroWaste



You can also add carrots, or turnip, or onion, or whatever you like or substitute the rice for potatoes, but with rice we have a gluten-free soup, good for who suffers intolerance.

Inspired by a #ZeroWaste blog, I have been doing changes in habits I had, which lead me to more waste. One of the many, was buying tea in individual tea bags, expensive and that would end up, off course, in the garbage bin, separated in the plastic waste garbage bin and in the cardboard waste garbage bin... but this way, I can do my own blend of tea with spices, which I buy in bulk and keep in glass jars, that I save from the supermarket, the black tea I also buy in bulk, I save oranges, clementines and lemon peels, all organic, which I leave to dry at the window sill and then I just mix a bit of everything, keep it in a glass jar and end up with a great tea mix, comforting for rainy days and if you do ice tea, is very refreshing for hotter days! And it is VERY cheap!! Nevertheless, the recipe is not mine, so see here, so simple!



I truly advise checking up this blog, it has really nice tips on how to reduce everyday waste and you can also participate in webinars (I have been checking some), where you can meet the blog author and talk with her.

Last week I sent my recipes of two different pâtés for Sabores Partilhados, a "Digital Magazine dedicated to sharing author recipes by the hand of specialised bloggers." They already published my beetroot, with balsamic vinegar and marjoram soup recipe, in the magazine Sabores Partilhados nº23, available here. Anyway, I wasn't fast enough for the pâtés edition (which has really nice recipes), I share here my recipes:

  • Tomato pâté, with capers

    Ingredients: 
- 2 Tbsp of corn starch
- 1,5 cup of soy milk
- salt and papper to taste
- 1 Tbsp of tomato paste
- a pinch of sugar (optional, I did not use!) 
- 2 Tbsp of mayo
- 2 Tbsp of capers

           Preparation: 

Dissolve the corn starch in milk and bring it to a boil, medium heat, stirring often.
Turn off the heat and add the tomato paste and sugar (if used), stirring often until it cools down.
Add mayo and mix well.
Blend in the capers.  

  • Black olives, with artichoke and spicy olive oil pâté

    Ingredients: 

     
- 300 g of black olives without core
- 90 g of olive oil (I used one I had made with very spicy peppers) 
- 1 Tbsp of oreganos 
- 1 garlic clove
- salt to taste
- 2 or 3 artichokes (canned), to taste

           Preparation:


In a blender, mix and mince the olive oil and garlic. 
Add the olives and blend until you get a smooth cream. 
Add the oreganos and salt a blend for about 30 more seconds. 



Put in the fridge for at least 1 hour, before serving. Serve with bread, toasts, cream crackers, ...

Street Food Festival is here. I wanted to go, but I had flu and I stayed in bed with fever, and after that because the weather has been do dry I developed allergies and an allergic conjunctivitis and, to be honest, it was so cold and I was feeling lazy and didn't feel in the mood to look for a vegan food truck. I am sure that they existed, but lately I haven't been in the mood to try anything out... and since I had the pâtés, I thought about using them for my vegan kebab version!! I even made the mayo.

Vegan mayo recipe
(For 4 persons)

Ingredients: 

- 100gof soy milk
- a pinch of salt
- 1 tsp of garlic powder (optional)
- 200 g of vegetable oil (I used 1:1, peanut oil:sunflower oil)
- 1 Tbsp of lemon juice
- a pinch of saffron

Preparation:

Blend all together, except the oil and mix well, for about 1 minute. Add the oil slowly in the blender and add the lemon juice. Mix well until you have the desired consistency. It couldn't be more easy :)

The pita bread was from LIDL, vegan option. And for the stuffing, I cutted seitan in thin stripes, and let it marinate for about 4 hours, in the fridge. The marinade ingredients were:

- 2 Tbsp of olive oil
- 2 Tbsp of lemon juice
- 1 Tbsp of soy sauce
- 1 tsp of garlic powder
- 1 tsp of paprika
- 2 tsp of dried mint
- 2 tsp of cumin powder
- 1 tsp of dried thyme
- 1/2 tsp of chili pepper

Sautée one dice onion in a bit of olive oil in a frying pan and add the seitan with the marinated sauce, and cook about 10-15 minutes, over medium heat, until the seitan is cooked.

Starting stuffing the pita bread, I add to each one of the 2 Tbsp of tomato pâté, 2 Tbsp of olives pâté, lettuce leaf, seitan (until the top!), 2 Tbsp of mayo, 1 cherry tomato and a few cucumber slices! It was marvellous!! I can't wait to do it again! Plus, it is a very nice way not to let the pâtées get spoiled in the fridge.

And it all these Street Food and mayo stuff the only thing missing is ketchup, right? :) Not anymore, because I also made it! I did it with the tomato paste leftover I used for the tomato pâté and made a ketchup that will make me not ever again buy one in the supermarket. I loved it!!! Now the only thing missing are some "fried/oven baked" chips and a good movie! Better than popcorn


Ketchup recipe
(Serves 1 cup)

Ingredients:

- 2 cans of tomato paste (I used the ones from LIDL)
- 1 Tbsp of maple syrup and 1 Tbsp of coconut sugar (I used 1 tsp of agave syrup and a 1 tsp of honey)
- salt to taste
- 1/4 tsp of cinnamon powder
- 1/4 tsp of garlic powder
- 1/4 tsp of ginger powder
- 1/4 tsp of allspice
- 1/4 tsp of nutmeg
- 1 or 2 bits of cloves
- 1/2 cup of water
- 2-4 Tbsp of mustard (I used 1/2 tsp of yellow mustard seeds)

Blend all together until you get the desired consistency. Keep in an airtight glass jar, preferably sterilised and goes to the fridge. It can keep up to 2 weeks up to a month and can also be frozen, but mine will be consumed rapidly!

For the last, this post is already long... somehow to compensate the time I did not post anything :) and also because Easter is almost here, it is always a good excuse to eat more chocolate! More than eat, I am also participating in a Easter giveaway, rules here, in which the prize is more chocolate from one of my favourite dark chocolate brands, a Portuguese brand called Pantagruel!! It was so nice to bake this cake and at the same time I have a healthy and tasty, nice looking cake! I tasted it already... and off course it is suspicious, coming from me, but it delicious! The toppings may vary a little, you can use white chocolate in contrast with the chocolate cake colour, or use two types of chocolate, one zested or top with chocolate eggs, or nuts, for example. You can also add a bit of Port wine or Moscatel wine or any other drink to the topping. Sky is the limit!
 
 

 Banana, carrot and chocolate cake

Ingredients for the cake:

- 4 medium ripe bananas
- 1 cup of minced carrot
- 225 g of all-purpose flour
- 100 g of light brown sugar (I used a portuguese brand, Sidul)
- 1/2 tsp of baking powder
- 1 tsp of baking soda
- 1 tsp of vanilla powder
- 100 g of cocoa powder (again, I used a portuguese brand, Pantagruel)
- 230 g of soy milk
- 200 g vegetable oil (sunflower)

Ingredients for the topping:

- 125 g of a chocolate bar (I used 70% dark chocolate, from Pantagruel)
- 1 t 2 Tbsp of vegetable cream (Alpro)
- 1/2 tsp of cinnamon powder


Directions for the cake:
Pre-heat oven at 180 C and grease a round baking tray, of about 22 cm diameter, with vegetable butter and sprinkled with flour. Reserve.

Sieve the flour, cocoa powder, baking powder and baking soda, into a large bowl and set aside. Purée the carrot and banana together. Add the milk and mix well. Add the sugar and vanilla and mix well. Add this liquid mix to the dry ingredients and mix until smooth and homogeneous dough.

Bake in the oven for about 35-40 minutes.

Directions for the topping:

In a non-stick pan, add the cream, chocolate and cinnamon and let it melt, stirring once in a while, low heat, until the chocolate is completely mixed. Set aside until it cools slightly.


When the cake cools down, put the chocolate topping over the top, until it covers the cake. Garnish with Easter almonds! Put the cake in the fridge before serving!


This one will be #ZeroWaste, it won't be any leftovers for Easter!! :)

Dia dos Namorados & Vício de Slowcooking *Valentine's day & Slowcooking addiction*

Ontem foi o tão famoso Dia dos Namorados, São Valentim, Dia dos Amigos, aqui por estas terras do Norte! Muitos nomes, apenas para celebrar o amar, gostar de alguém. No entanto deveria ser celebrado e lembrado todos os dias, com os amigos e amores! Mas enfim, mais uma desculpa nesta sociedade consumista para gastar dinheiro em prendas, flores e jantares! Confesso que sabe bem, mas sabe ainda melhor receber flores num outro dia qualquer, espontaneamente, sem ser planeado :) Este ano o cartão foi electrónico, feito por mim e a prenda foi um bolo de cacau (vegan), com cobertura de chocolate e Mix D'Amor, da ISWARI! Participei num concurso do Facebook da Cozinha Verde e ganhei!!! Os chocolates ainda não os provei, mas devem ser óptimos. O Mix D'Amor é fantástico e fica óptimo nos bolos, misturado em cereais, iogurtes ou simplesmente comer assim. Vou começar a experimentar os outros produtos deles, porque têm qualidade, uma boa apresentação e são saborosos. Só gostava de os poder comprar ao peso, para não acabar com tantas embalagens...



Não está lindo o bolo?!! E ficou super saboroso! Bolo de cacau orgânico, fairtrade, com nozes no interior e uma tablete de 120 g de um chocolate que havia aqui por casa, derretida e com o Mix D'Amor espalhado por cima. Divinal!! E feito com muito amor <3

E agora o meu novo vício! Slow cooking!!! Já andava de olho numa destas caçarolas há imenso tempo. Vi as Le creuset, caríssimas, as do Jamie Oliver, igualmente, as do IKEA, não podem ir à máquina de lavar loiça, enfim... de marca, sem ser de marca... e não me resolvia! Até que encontrei esta da Pyrex, um bom tamanho, pode ir à máquina de lavar loiça, foi relativamente barata (apanhei em promoção) e adorei a cor! Claro que assim que a comprei, comecei a cozinhar e ando a forçar-me a não cozinhar sem parar! Além de super fácil, a comida fica com um sabor óptimo, principalmente os legumes!


Comecei com uma receita simples, cozer feijão manteiga (demolhado de véspera), em lume baixo, cerca de 4-5 horas. Aproveitei a água da cozedura do feijão e comecei a preparar sopa minestrone! Que além de me fazer lembrar a sopa de feijão da minha mãe, sabe tão bem comer nestes dias frios e escuros!



E claro, não fiquei quieta, porque adorei o sabor da sopa e fui fazer uma caçarola de salsichas de tofu e legumes! 4 horas depois tinha um cheirinho maravilhoso em casa, um pote de comida que me dá para a semana inteira e um prato saudável e super saboroso!!



Tenho de ter cuidado, porque só me apetece mandar coisas para dentro da caçarola e deixar um par de horas e ficar com um prato saudável, cheio de nutrientes, saboroso e que não me deu praticamente trabalho nenhum a fazer! Mas como não tenho congelador, tenho de ter cuidado com as porções e começar a limitar o Slowcooking apenas ao fim-de-semana :)

E claro, outra das vantagens é que continuo com o meu #DesperdícioZero, mesmo sem fazer compostagem, aproveitei os restos de comida e fiz caldo de legumes.





Nham nham, vai ser uma óptima base para sopas e outros cozinhados!!

Yesterday was the famous Valentine's Day, Lover's Day, Ystävänpäivä or Friend's Day, here in this forsaken land in the North! So many different names, just to celebrate the love, liking someone. Still it should be acknowledged and celebrated every single day, among friends and lover(s)! But Oh well, just another excuse in this consumer society, for spending money in gifts, postcards, flowers, romantic dinners! I confess it feels good to receive flowers, but it feels even better to get flowers in a random, regular day, spontaneously without being planned :) So this year the postcard was emailed and made by me and the gift was a (vegan) cocoa cake, with chocolate frosting and "Mix D'Amor" (or Mix O'Love), from ISWARI! I entered a Facebook giveaway from Cozinha Verde and I won!!! I still haven't tasted the chocolate bars, but they must be great. The Mix D'Amor is fantastic and it is great for cakes, mixed with cereals, yogurt or simply eating it like that. I will try their other products, because they clearly have quality, a nice presentation and they are super tasty and good. I just wished I could buy them by weight, so I don't end up with so many packages...



Isn't the cake beautiful?!! And it turned out super tasty! 100 % organic, fairtrade cocoa cake, with nuts inside and a melted 120 g chocolate bar that was forgotten in the house, plus the Mix D'Amor spread all over it. Divine!! And made with a lot of love <3

And now, my new addiction! Slow cooking!!! I was already looking at some of these casseroles for a while. Saw the ones from Le creuset, ridiculous expensive, the ones from Jamie Oliver, likewise, the ones from IKEA, not dishwasher safe, whatever... brand, no brand... I couldn't make a decision! Until I found this one from Pyrex, good size, plus it is dishwasher safe, was relatively cheap (got it on sale) and I love the colour! Off course, immediately after buying it, I started cooking and actually I am currently forcing myself not to cook non-stop! Because it is not only super easy, but the food has a great flavour, specially the veggies!


I started with a simple thing, cooking butter beans (soaked overnight), low heat, about 4-5 hours. I used the same water from the beans and started preparing minestrone soup! It reminds of my mom's bean soup and it feels good to eat in these cold and dark days!



And of course, I did not stop here, because I loved the soup so I decided to prepare a tofu sausages and veggies casserole! 4 hours later I had a wonderful smell at home, food that will last the whole week and a healthy and super tasty dish!!



I have to be careful though, I just feel like throwing things into the pot, leave them there for a couple of hours and end up with a healthy, fool of nutrients, tasty and almost effortless! But since I don't have a freezer, I have to be careful with the portions and start limiting Slowcooking only for the weekends :)

And of course, another adavantage is that my #ZeroWaste objective keeps going, even without doing composting at home, I used the peels of the veggies and did a vegetable broth.




Nham nham, it will be a tasty base for soups and other cookings!!

O que se passa na minha vida sem congelador... *What is happening in my life without freezer...*

  • Check-point da minha vida sem congelador...

Para ser honesta, tenho começado a sentir falta do congelador.. especialmente quando estou a comprar frutas e legumes para fazer batidos. Antigamente eu costumava preparar a quantidade certa para a semana ou mês de batidos e levar ao congelador em doses individuais, em sacos de ziplock e tirar e fazer um batido sempre que tivesse vontade...e agora... agora não posso :/ E é nestes momentos que sinto falta nem que seja de ter uns cubos de gelo para conseguir fazer um batido fresquinho! Mas nunca desistir, eu serei forte!! Até porque na verdade a única coisa boa é que pelo menos já não uso tantos sacos individuais! Portanto já não há um desperdício eterno de sacos de ziplock. E apesar de sentir do congelador claro que consigo sobreviver sem ele e não é o fim do mundo, é uma questão de hábito. É só tentar não cozinhar para um batalhão, quando sou só eu em casa, por exemple, senão tenho de andar a comer o mesmo a semana inteira, lol!

Mas continuando, tenho andado a fazer essencialmente soupas. Tenho sempre, pelo menos, duas soupas diferentes no frigorífico, assim não me chateio de andar a comer a mesma a semana inteira. E até agora tem corrido tudo bem. Na verdade gosto de (fazer e comer) sopas cada vez mais! E são saudáveis, com vegetais orgânicos e ricos em sabor e é tão fácil misturar e acabar sempre com uma sopa nova e espectacular, adoro sopas!! Tenho um LIKE para soupas!!! :)

No entanto no vou estar em casa nos próximos cinco dias, então comecei a olhar para o frigorífico,a ver o que precisa de ser cozinhado para não se estragar! Acabei com mais uma sopa de beterraba-cenoura-cebola-batata, lentilhas toor dal com cenoura (e um cheirinho de vodka no molho de tomate, só para dar um gostinho) e mel, acompanhado de esparguete integral.


E, também havia um abacate, três tomates cherry, um bocado de espinafres salteados com alho, milho e salsichas de soja... e iogurte de soja! O que aconteceu é que misturei tudo com tofu, um bocadinho de molho de soja e ervas aromáticas e fiz uma quiche sem massa. Desta forma até consigo levar comigo sem me preocupar que se vai estragar e ir para o lixo! E posso petiscar sempre que tiver fome!! Situação favorável para ambos os lados!!



E de momento ando super entusiasmada!! O meu novo projecto de #desperdíciozero, é guardar as cascas de laranjas e limões (para começar!), deixá-las secar e mais tarde fazer a minha própria mistura para chá. De momento estão e vão ficar a secar à janela, depois vou cortar em pedacinhos pequenos, adicionar especiarias, como canela, cardamomo, gengibre, anis, e o que mais me lembrar a folhas de chá preto e voilá, fico uma mistura de chá mega-saudável-e-rica-em-sabor!!!


Mas aquilo que realmente me fez ganhar o dia e colocou um enorme sorriso na minha cara!!


Vi isto depois de ter ido pôr o lixo e sair para a rua! Bem vindo a Kallio solarengo!!

Nunca esquecer de sorrir! :)

  • Check-point of living without freezer...

To be honest, I have been starting to miss it.. specially when I am buying veggies and fruit for smoothies. Before I could prepare a week- or month-worth of smoothies and freeze them individually in ziplock bags and make a smoothie whenever I felt like...and now... now I cannot :/ So in those moments I miss at least having some ice cubes to go with the smoothie! But never give up, I shall be strong!! Because actually the good thing is that at least I don't use so many individual bags anymore! So no more endless waste of bags. And although I miss the freezer I still manage to survive without it and it is no big deal, I get used to it. It is just a question of not over-cooking, for example, or otherwise I will be eating the same thing the entire week, lol!

But anyway, I have been doing mostly soups. I always have, at least, two types of soup in the fridge, so I don't get tired of always having the same one that week. And so far so good. I actually like soups more and more! And they are healthy, full of healthy veggies and rich flavour and so easy to mix and have new and exciting soups, that I love them!! I haz a LIKE for soups!!! :)

But the thing now is that I am not going to stay at home for the next five days, so I started scanning the fridge to see what needs to be cooked! It turned out in a beetroot-carrot-onion-potato soup, toor dal lentils with carrots (and a hint of vodka in the tomato sauce, just to give it a nice touch) and honey with whole-wheat pasta.


Also, I had left one avocado, three cherry tomatoes, some sautée spinach, with garlic, sweet corn and soya sausages... and soya yogurt! So I pretty much mixed everything with tofu, a bit of soya sauce and herbs and did a crust-less quiche. This way I can take it with me without worrying about spoilage and waste! And snack when I am hungry!! Win-win situation!!



At the moment I am so excited!! My new project to try to go #zerowaste, is to save all the peels of oranges and lemons (to start!), let them dry and later do my own mix for tea. Now they are drying by the window, I will cut them in tiny pieces, add some spices, like cinnamom, cardamom, ginger, anis, you name it to black tea and voilá, I have some rich-flavoured-healthy-mix of tea!!!


And now what really made my day and put a huge smile on my face!!


I saw this just after I put the garbage out and went to the street! Welcome to sunny Kallio!!

Dia da saudade, broa de milho e centeio e eliminacão de sacos de pão *Saudade day, corn and rye flour bread and more bread bags*

E porque hoje, 30 de Janeiro, é a celebração do Dia da Saudade (celebrado no Brasil, pelo menos), decidi escrever sobre a fantástica e tradicional broa de milho que eu costumava comer, feita pela minha avó, em Portugal. E que tenho tantas saudades!!



  • Desabafo:  

Estou farta de tanto saco e saquinho e saqueta e embalagem de plástico cada vez que vou ao supermercado! Ora é o pão, ou a alface, ou a fruta ou até a cabeça de bróculos com papel aderente à volta!! Em parte é mea culpa, não tenho ido ao mercado e como tal no supermercado é o que calha, por mais que tente escolher produtos locais, orgânicos, volta e meia chego a casa com as compras e fico meia hora a desembrulhar e a deitar para o lixo embalagens de plástico, que não servem para mais nada... pior que os presentes de Natal, chiça!! Mas o que me tem chateado mais ultimamente é o pão. Por cá existe um pão de centeio que adoro, que vem em embalagens de 8 fatias. Ora, está-se mesmo a ver que cada semana é pelo menos um saco destes a ir para o lixo.. mesmo que os tente aproveitar para outras coisas não dá, fico com uma acumulação de sacos de plástico, no mínimo, ridícula!! E então, por estar com saudades de broa de milho e estar já a pensar em fazer tofu com broa (e como cá não há broa!!), tudo boas razões para fazer eu a minha, decidi fazer em casa broa de milho! Claro que com uma adaptação, além da farinha de milho leva também farinha de centeio (tradicionalmente seria farinha de trigo) e devo dizer que o resultado final é FABULÁSTICO!!!


 
Confesso que não é tão boa como o que a minha avó fazia, que cultivava o milho, moía para fazer a farinha, num moinho de água, amassava e cozia em forno de lenha - saudades... Mas mesmo assim, fiquei fã do sabor, das saudades aliviadas, das experiências culinárias futuras e claro, da introdução da farinha de centeio, que faz o pão um pouco mais saudável e com um sabor óptimo! E a cereja no topo do bolo (neste caso, da broa!) é que assim evito todos os sacos e saquinhos e saquetas e embalagens de plástico!

Objectivo #DesperdícioZero atingido!!!

Aos poucos o desperdício vai sendo menos!

 Because today, 30th of January, is Saudade Day celebration (celebrated in Brazil, at least), I decided to write about an amazing traditional corn bread I used to eat, made by my grandmother, back in Portugal. And that I miss so much!!


  • Talking out loud:  

I am sick and tired of all the bags and little bags and containers and whatever each time I go to the supermarket! It is either the bread, the lettuce, or the fruit or even a brocolli head comes with film surrounding it!! In a way, it's mea culpa, I haven't been going to the local market and in the supermarket I have no choice, I try to get local, organic products, and most of the time I get home and spend at least half an hour unwrapping and throwing to the garbage plastic films and containers, which are totally useless... it is worse than X-mas wrappings, damn it!! But what has really been itching me is the bread. In this forsaken land there's a rye bread I love, which come in 8 slices tiny plastic bag. Well, obviously, each week is at least one plastic bag that goes to waste.. and even if I try to re-use them in some other thing they are too small, so I tend to accumulate a ridiculous amount of plastic bags!! So, because I miss corn bread and also I am already thinking about cooking tofu with it (and since this type of bread does not exist in this forsaken land!!), all good reasons for me to bake one, I decided to bake an homemade corn bread! Of course I did a tiny adaptation, besides the corn flour it also takes rye flour (tradiccionally it would be wheat flour) and I must say that the final result is just HOLY AMAZING!!!


 
I confess that it is not as good as the one my grandmother used to bake, she would plant the corn, did the flour in a watermill, knead the dough and bake it in a wood oven - I miss it... But still, I am a big fan of the flavour, of the relieved longing for it, of the future culinary experiments and of course, of the introduction of the rye flour, which makes the bread a little bit more healthy and with a great flavour! And the cherry on top of the cake (in this case, the corn bread!) is that this way I avoid all the bags and little bags and containers and whatever!

Objective #ZeroWaste accomplished!!!

Little by little, the waste is less and less!
