Dia do bolo de chocolate (EUA) *Chocolate cake day (USA)*

Aparentemente hoje é o dia do bolo de chocolate! Pelo menos nos EUA, mas fico feliz por o celebrar também :) Qualquer celebração que envolva chocolate nunca é demais!! Portanto vou partilhar uma delícia que fiz no Sábado passado, para um jantar em casa de uma amiga! Bolo de abóbora (manteiga) com cacau (a receita foi adaptada daqui, e alterei as especiarias e claro, fiz a versão vegan!!). O bolo ficou extraordinariamente bom, ou tanto, que quase que desapareceu em minutos! De qualquer das formas, planeio fazer outro depressa (já que só comi uma fatia). É um bolo leve, quase com uma textura de veludo, que vem do puré de manteiga e o sabor do cacau fica excelente!

E claro, o que sobrou do puré de abóbora, foi aproveitado para fazer fajitas de feijão e abóbora e ainda um bocado foi para (outra sopa) soup!! Torrei as sementes no forno, temperadas com sal e estavam tão saborosas que tive de esconder o frasco para não comer tudo de uma só vez!!


Enfim, aproveitem o vosso dia do bolo de chocolate, comam um bolo de chocolate, um batido de chocolate ou uma tablete de chocolate! Comam sem arrependimentos e sejam felizes!!!

So, apparently today is chocolate cake day! At least in the USA, but I am happy celebrating it too :) Any celebration including chocolate is always great!! So I will share something I did last Saturday, for a dinner party! A butternut squash and cacao cake (adapted from here, meaning that I changed the spices and made it vegan!!). The cake turned out extremely good, so much, that was almost gone in a few minutes! Anyway, I plan to make another one soon (since I had only one slice). It is a very light cake, the butternut squash gives it a velvet-like texture and the cacao is just amazing!


Doesn't it look marvelous?!! ;)

And it the leftovers of the butternut squash puree, I did bean-butternut squash-fajitas and a piece went for (another) soup!! The seeds I roasted in oven with salt and they were so delicious that I had to hide the jar so I wouldn't eat them in one go!!


So, enjoy your chocolate day, have a chocolate cake, a chocolate smoothie or a chocolate bar! Eat it no regrets and feel happy!!!

Sopas & O resultado do Processo de Conservação: Fase 1 e Fase 2 iniciadas *Soups & The outcome of "Preservation process: Iniciated Phase 1 and Phase 2"*

"Ora bem, estou de partida para Portugal, já a contar as horas. O meu frigorífico está quase vazio, o que quer dizer que consegui comer a comida toda que cozinhei depois do congelador ter avariado e também a que já tinha no frigorífico! Estou contente por isso e por ir passar o Natal com a minha família. Em 2015 vai haver mais blog, esperemos que com muito menos desperdício e mais receitas saudáveis, que consigam sobreviver à falta do congelador.

Deixei os pimentos a secarem na janela, para fazer conserva e vou deixar a abóbora na mesa, porque aparentemente consegue aguentar 3 meses... só não sei que "idade tinha" quando a comprei :) 

 

Espero chegar e não ter bolores ou bichinhos pela casa. Além de chato, seria um desperdício de comida."

Isto foi o que escrevi à 55 dias atrás, no dia 28 de Novembro, véspera de viajar. Tinha no frigorífico ainda um resto de lasanha e puré, que iria dar para o jantar desse dia e almoço do próximo. O objectivo de desligar o frigorífico iria ser alcançado!!

  • E foi!!! Fui embora, depois de conseguir cozinhar e comer toda a comida que tinha no congelador, sem deitar comida fora e desperdiçar.

Ora bem, agora de volta vi que os pimentos estavam bem secos, pendurados na janela e a abóbora aguentou este tempo todo! Resolvi logo fazer azeite aromatizado e enfiei os pimentos num frasco de vidro (re-aproveitamento de umas conservas que comprei) e vou deixá-lo com azeite, bem fechado, no fundo do armário, no escuro, durante cerca de 1 mês. Depois é só usá-lo para temperar cozinhados que precisem de um toque mais picante!



Relativamente à abóbora, uma parte já foi para a sopa e a outra parte irá para um bolo de abóbora e chocolate, que ainda vou fazer. Esta semana tem sido uma semana de sopas, consegui fazer sopa de cenoura, sopa de beterraba (que vai ser publicada aqui) e sopa de abóbora com a água que sobrou de fazer o arroz árabe :p

Além de que estas sopas, que têm um toque aveludado, porque adoro cremes, são feitas com legumes locais e muito saborosos. Levam poucos, mas bons ingredientes e temperos q.b. Ando tão viciada em sopas que lembrei-me de fazer 1 mês só de sopas, com uma sopa nova cada dia!

Ontem tive um óptimo acompanhamento à sopas de espinafres (que entretanto fiz, portanto, mais uma sopa para a contagem!). Uma amiga está a fazer a "semana vegetariana" e cozinhou comida a mais, então deu-me um pouco para o meu jantar! Adorei!!! Grão de bico estufado com courgete, bróculos, cenoura e figo, acompanhado de couscous. Tem um aspecto delicioso e o sabor estava óptimo!! Fico à espera da inspiração!!

"Well, I am off to Portugal, already counting the hours. My fridge is almost empty, which means I managed to eat all the food I cooked after the freezer broke and also what I still had in the fridge! I am happy for that and for spending x-mas with my family. In 2015 there will be more posts in the blog, let's hope with a lot less waste and more healthy recipes, without the need for freezer.

I left the peppers drying at the window, to preserve them and i will leave the butternut squash on the table, because apparently it can survive for 3 months... I just don't know "how old it was" when I bought it :) 
 

I hope to arrive without molds or little bugs in the house. Because, it would be not only annoying, but also a waste of food."

This is what I wrote 55 days ago, on the 28th of November, the day before of traveling. I had in the fridge, still, a lasagna leftover e mashed potatoes, which would be enough for dinner that day and lunch next day. The aim of turning off the fridge while I was gone would be reached!!


  • And it was, indeed!!! I left, after being able to cook and eat all the food I had in the freezer, without wasting or throw food to the garbage bin.

Well, now that I returned I saw that the peppers were completely dried, hanging on the window e the pumpkin was ok, survived this whole time! I decided to do spicy olive oil and I put the pepper inside a mason jar (re-using one I bought with pickles) and leave them in olive oil, tightly closed, at the back of the closed, in the dark, for an entire month. After that all I need to do is use in some spicy cooking to give a hot touch!


Regarding the butternut squash, a piece of it went straight to the soup and the other piece will be to bake a butternut squash and chocolate cake. This week has been a soup week, I managed to do a carrot soup, beetroot soup (which will be published here) and butternut squash soup with the leftover-water of cooking arabic rice :p

Besides that all these soups, that have a silky touch, because I just love them creamy, they are all made with local vegetables and very tasteful. Not too many, but good ingredients and spices to taste. I am so addicted to soups that I thought about doing a whole month of soups, one new soup each day!Let's wait for some inspiration!!

Yesterday I had a really great dish beside my spinach soup (so, another soup to add to the counting!). A friend of mine is doing a "vegetarian week" and cooked too much food, so she gave me a bit for my dinner! Just loved it!!! Stewed chickpea with courgette, broccoli, carrot and fig, with couscous. Sure it has a delicious look and the taste was wonderful!!

Mercado, maçãs & teste ao bolo de casamento *Local market, apples & wedding cake tester*

Desde que cheguei ainda não parei! E além disso, constipei-me... sem comentários! Não é que esteja mais frio do que na Finlândia, mas por cá o frio é húmido, daquele que se entranha nos ossos e dói e as casas não estão tão bem isoladas... mas deu para ir ao mercado comprar uns legumes, plantados por agricultores da zona! Andei a ver e acabei por trazer duas abóboras manteiga, azeitonas pisadas (do Alentejo, nhom nhom), beterraba, beringela, castanhas, nabo, batata-doce, courgette, cebola, ... e tanta coisa boa!! Alguns dos legumes foram parar ao forno neste belo prato com seitan.



As abóboras vão ter outro destino, quero fazer creme de abóbora com laranja! Para experimentar! De loucos!!!


E entretanto, o meu namorado um dia chega a casa e diz que tem imensas maçãs a estragarem-se no frigorífico do trabalho. Digo logo para trazer umas quantas e fiz apple crumble e uma tarte de maçã escangalhada. Fiquei babada com os elogios e com um cheirinho óptimo a maçã e canela em casa ;)


 A boa notícia é que consegui fazer um bolo de casamento, versão de teste. Já tinha treinado antes, com cerca de 3 receitas diferentes, mas este ganhou, pela simplicidade, facilidade e sabor. Escusado será dizer que é vegan claro! É um "Victorian Sponge Cake", versão do Jamie Oliver (receita aqui). Mas o recheio foi totalmente diferente, natas de soja batidas e calda de framboesas, com vinho moscatel! 



Falsa modéstia, estava divinal!! Agoro tenho de fazer a versão XL que vai dar para cerca de 40 pessoas. (Este dá para 12-15 pessoas) :) Estou super entusiasmada! Se correr tudo como espero, a minha vontade de fazer bolos e vender ou abrir um café fazem mais sentido :)

E o livro que ganhei neste giveway finalmente chegou! Consegui ir levantá-lo aos correios mesmo no último dia, por pouco não era devolvido aos EUA. Já andei a desfolhar e tem receitas que são de babar! Já tenho umas quantas em lista de espera.

It has been crazy since I arrived! And besides, I got sick... so, no comments! It is not colder here than in Finland, but here we have this highly moist cold weather, the kind that gets into your bones and hurts a lot and plus, our houses are really terribly built for this cold... but still I managed to go to the local veggies and fruit market! I ended up buying two butternut squashs, "smashed" green olives (from Alentejo, nhom nhom), beetroot, eggplant, chestnuts, turnip, sweet potatoes, courgette, onions, ... and so much good stuff!! Some of the vegetables ended up roasted with seitan and rosemary.



The butternut squash will end up in a different way, I wanna try butternut cream soup with orange! Crazy, crazy!!!


Meanwhile, the other day my boyfriend gets home and tells me that there are tons of apples, going to a spoil in the work fridge. I immediately say to bring a couple of them e I did apple crumble and a de-constructed apple pie. I has so happy and embarrassed with the compliments and with a lovely smell of apple and cinnamon at my place ;)


 The good news is that I managed to do the wedding cake, test version. I had practiced before already, with about 3 different recipes, but this one was the winner, due to simplicity, easy to do and flavour. No need to say that is a vegan cake, obviously! It is a Victorian Sponge Cake, Jamie Oliver's recipe (from here). But the middle layer was totally different, soya whipped cream and raspberry "jam", with moscatel wine! 



If I may say so myself, it was divine!! Now I only need to do the XL size, for about 40 slices. (This cake is for 12-15 slices) :) I am super thrilled! If everything goes as I expect, my will to bake and sell them or even open a small cafe are closer :)

And the book I won in this giveway finally arrived! I managed to get it from the post office on the last day before being returned to the US. I had a quick pick and I drooled in a lot of recipes! I already have a waiting list.
