Resoluções de Ano Novo*New Year Resolutions*

Ano Novo... é como um botão de reiniciar à meia-noite e tudo começa do zero... é como uma página em branco num caderno novo... é como respirar pela 1ª vez... mas este ano não fiz grandes desejos, já fico contente se em 2015 acabar o Doutoramento, encontrar um trabalho porreiro e continuar a minha aventura (culinária) sem congelador!! Simples, vamos ver como corre :)

No entanto, tive uma experiência nova no final de 2014. O meu tio deu-me uma fruta vermelha "esquisita", em que o interior parece o interior do maracujá, mas é completamente vermelho por fora. Aparentemente, podia comer-se cru, e o sabor era bom, suave e um pouco parecido com maracujá :) "Googlei" e era tamarilho. Cresce em árvore e o meu tio até me disse que posso ter quantos tamarilhos eu quiser. Para experimentar, fiz um doce com eles, com um bocadinho de canela, cardamomo, açúcar mascavado e uma casca de limão orgânico (do Alentejo)! Tem um sabor suave e não muito forte, tenho de tentar com scones e talvez chá de jasmin. E agora tenho de pensar em novas e diferentes receitas.

Hoje, para começar de forma saudável o novo ano de 2015, fui ao mercado local, abastecer a despensa com tubérculos e legumes. Vou fazer sopas ricas em sabor e saudáveis ;) e ainda aprendi a entrançar as cebolas, com a ajuda da minha mãe :) Bonita decoração!!

New Year... it is like a reset button at midnight and everything starts over... it is like a blank page in a new notebook... it is like breathing for the first time... although this year I had no big wishes at midnight, I just wished 2015 to be better than 2014, so I will happy if I finish my PhD, find a nice job and continue my (cooking) journey without a freezer!! It sounds nice and simple to me, let's see how it turns out :)

Nevertheless, I had a new experience close to the end of 2014. My uncle gave me some kind of red "fruit", which the inside looked similar to passionfruit, but it was totally red on the outside. Apparently, it was ok to eat it raw, like that and the flavour was pleasant, a bit similar to passionfruit :) I googled it and it was tamarillo. It grows in a tree and my uncle told me he could give me as much as I wanted to. To try it, I did a jam with it, with a bit of cinnamon, cardamom, muscovado sugar and a bit of organic lemon (from Alentejo)! It tastes light and smooth, I have to try it scones and maybe jasmin tea. Now I need to think about different and totally new recipes.

So today, to start 2015 in an healthy mood, I went to the local farmers market, stock up with tubbers and veggies. I will cook tasty and healthy soups ;) plus, I learned how to "braid" the onions, with my mom's help mãe :) Nice decoration!!

Bolo de casamento (vegan) para 40 pessoas e presentes de natal caseiros * (Vegan) Wedding cake for 40 people and homemade x-mas gifts*

Pois foi, consegui fazer o "Victorian sponge cake" (para o casamento) para 40 pessoas!! Foi uma loucura e um desafio, mas consegui :) Tive de fazer 5 bolos de teste antes e entretanto decorei a receita :) Mas valeu a pena, houve alguns "problemazitos" com o bolo mas tive excelentes comentários!!! :D

Tinha de ser um "Victorian sponge cake", sem discussão! E até é um bolo relativamente fácil de fazer. É só cozer o bolo, cortar em 2 partes e montar, com uma camada de natas batidas e calda de fruta. Soa fácil, certo?!! Naah, é quase, quase fácil :) É um bolo que funciona perfeitamente em formas redondas, para cerca de 12 pessoas, mas aumentar para 40 pessoas e qualquer coisa como 4 a 4,5 kg de bolo, não é trivial e é de ESPERAR alguns problemas!!

A "versão mini", foi um bolo de baunilha com calda de framboesas orgânicas entre as 2 camadas de bolo, feito anteriormente e levou cerca de 1/2 dia a ficar pronto, porque, desde o bolo até às natas batidas e a calda devem estar frios antes de montar. A "versão XL" para o casamento foi feita com 4 bolos rectangulares, que por sorte eu tinha 2 tabuleiros que iam ao forno a par, portanto só demorou cerca de 1 dia a preparar tudo

Desta vez, fiz o bolo a saber mais a limão e usei 8 limões no total. Claro que depois fiquei com limões e acabaram em doce :)


As natas batidas eram de soja e procurei por framboesas, mirtilos, arandos e morangos de produção local e orgânicos, que depois fiz em calda e juntei um bocadinho de vinho da Madeira para dar sabor!

Quando estava tudo pronto, comecei a montar as partes, os 2 bolos ao lado um do outro, em cima uma camada de natas batidas e uma camada de calda de fruta e, depois, cuidadosamente, coloquei o bolo do lado direito em cima! Desastre!! Colapsou imediatamente, o bolo rachou e só tive tempo de gritar pela minha mãe, para ela vir à cozinha e ajudar-me!! Que desastre, pensei!! Ela calmamente disse para eu respirar fundo, acalmar e juntar a outra metade do bolo, que ia ajudar a segurar... nope, também rachou, embora um bocadinho menos, mas um desastre na mesma! Então ela teve a ideia de cobrir tudo com as natas, que ia actuar como se fosse uma cola, disse ela!! Resultou, eu estava tão aliviada e comecei a adicionar frutas, espalhadas aleatoriamente em cima do bolo. Depois coloquei o bolo com mega cuidado dentro do frigorífico para o dia seguinte levá-lo para o restaurante! Eu podia dormir sossegada, pensei, mas eu estava inquieta, não sossegava! E fui espreitar o frigorífico e voltei a gritar pela minha mãe!!! O bolo estava cheio de rachas! O que é que se podia fazer?! Desesperei... Mas então tive a "brilhante" ideia de colocar umas espátulas de madeira de lado a segurar e as garrafas de água para apertar contra as paredes do frigorífico, para segurar tudo no sítio...ok, não foi uma solução perfeita, mas funcionou! ;)


Sobreviveu a noite no frigorífico, sem colapsar, a viagem de carro, o transporte para o restaurante (debaixo de chuva!) e foi uma óptima surpresa para os noivos!!


Ainda se viu uma racha! Mas era só uma, e eu fiquei contente! E o sabor a limão era fantástico! Ufffaa, eu pude finalmente relaxar! Portanto no fim consegui fazer o bolo, mas da próxima vez tenho de fazer de modo diferente, este bolo é muito pesado, especialmente nesta forma rectangular, para montar em 2 camadas.

Este ano as prendas de natal vão ser caseiras, com muito amor e produtos locais e orgânicos! Fiz compota de abóbora manteiga com nozes (e um pau de canela) e fiz uma etiqueta toda catita para oferecer aos meus familiares e amigos! E para mim, claro, fiz uma espécie de compota de sobras-de-fruta, com as sobras de framboesas, arandos, mirtilos e morangos (que sobraram do bolo de casamento) e anis. As duas compotas têm um sabor óptimo!


Amanhã vou fazer uma sobremesa com a  compota de sobras-de-fruta, vamos a ver como corre!! :)

So I had to bake a Victorian sponge cake (for a wedding) for 40 persons!! It was quite a challenge! But I did it :) It took me 5 trials though and I no the recipe by hard now :) Anyway it was worth it, the cake had some "issues" but great feedback!!! :D

It had to be a Victorian sponge cake! And they are actually fairly easy to do. You just bake the dough, cut it in 2 parts and assemble them with a layer of heavy cream and fruit syrup. Sounds easy, right?!! Nope, almost easy :) This cake works perfectly in a round shape for about 12 persons, but when you upscale it for 40 persons and something between 4 to 4,5 kg of cake, DO expect some problems!!

The "small version", vanilla flavoured cake and organic raspberry syrup in between layers, was made before and it took me half a day, but everything, from the cake to the creams and syrup has to be cool before assembling. The "bigger version" for the wedding was actually made with 4 cakes, but luckily I had 2 trays which fitted in the oven at the same time, so it took me about a day to prepare everything.

I did a more lemon flavoured version and I used 8 lemons in total. After that I had all these lemons and they ended up in jam :)


The cream was soya cream and I looked for organic, local raspberries, blueberries, cranberries and strawberries, which I then made a syrup with Madeira wine in the sauce!

When I had everything ready, I started assembling the parts, so 2 cakes next to each other, on top a layer of cream and a layer of fruit and I carefully had the cake on the up-right side! It immediately collapsed everything, the cake was all cracking and I just shouted for my mom, so she should come to the kitchen and help me!! What a disaster I thought!! She told me to breath slowly, calm down and add the next part on the left that it would help... nope, it cracked less, that was a fact but was still a disaster! So she had the idea of cover everything with cream, it would act like a glue, she said!! It worked, I was relieved and started adding some fruits on top. After that I put the cake inside the fridge for the next day, to take it to the restaurant! I could sleep now, I thought, but somehow I was uneasy! So I went to look inside the fridge and I shouted for my mom... again!!! The cake was full of cracks! What would I do?! It was when I had the "brilliant" idea of adding some wood spatulas on both sides of the cake and some water bottles, to hold them in place...ok, not a very great solution, but it worked! ;)


It survived the night in the fridge, without collapsing, the car transportation to the restaurant (under pouring rain!) and it was a very good surprise for the bride and groom!!





It showed one crack! Only one, I was so happy! And it tasted lemon wonderfully! Ufff, I could finally relax! So in the end I was able to do it, but next time I have to do it differently, this cake is too heavy, specially in a rectangular shape, to assemble in 2 layers.

This year x-mas gifts will be homemade, with love and organic, local products! I did butternut squash jam with walnuts (and a scent of cinnamon) and a nice label to offer to my relatives and friends! And for me, I did all-in jam, with the leftovers of raspberries, cranberries, blueberries and strawberries (leftovers from the wedding cake) and anise. They both taste marvelous!



Tomorrow I am planning a dessert with the all-in jam, let's see then how it goes!! :)

Limões&laranjas biológicos e mais concursos *Organic lemons&oranges and more giveaways*

Estas últimas semanas em Portugal têm sido de doidos!! Praticamente não tenho escrito nada... Estou sempre atarefada com alguma coisa, boa ou má, mas que me toma todo o meu tempo e a minha energia...

No entanto, na semana passada recebi uma embalagem fantástica vinda da Suécia, com doces vegan maravilhosos, caramelos de cardamomo&laranja e chocolate negro&especiarias! Recebi-os porque fui uma das sortudas que ganhou este giveaway de doces vegan. Tack :D


Desembrulhei logo tudo e provei-os e foi surpreendente! Os dois sabores são fantásticos e excelentes em textura, mas os de chocolate negro são simplesmente divinais!! São os meus favoritos e são tão suaaaves na boca e a mistura de especiarias simplesmente explode na boca enquanto o chocolate derrete!! Um verdadeiro prazer! Não fui capaz de os parar de comer! <3!! Eu só queria saber a receita :)

O embrulho era ao mesmo tempo simples e bonito e nada pegajoso, como os caramelos "normais", que se colam a tudo, desde as mãos aos dentes :p Por isso, se tiverem tempo, dêem uma olhadela no blog. Tem uma apresentacão óptima e as receitas são o máximo, simples e sofisticadas, além de serem vegan!

Alguns dias depois, fui até ao sul de Portugal, a uma terrinha chamada Alfundão, a trabalho e lazer e aproveitei para ir ver como estava a minha casa lá! Nós não vamos lá com muita frequência, apesar de eu adorar ir mais vezes, mas mesmo assim ainda conseguimos manter cerca de 10 árvores de fruto no nosso quintal, desde limoeiros, laranjeiras a uma pereira e uma romãzeira. São árvores biológicas de certeza absoluta, visto que são regadas quando chove, não têm pesticidas, herbicidas, químicos de espécie nenhuma e sol, montes & montes de sol!!

Foi uma visão espectacular, as árvores estão carregadíssimas de fruta! Fiquei sem fôlego quando as vi! A fruta é tanta nos ramos que, devido ao peso, estes dobram até ao chão.


Resultado, trouxemos carradas de limões (e ainda não sei muito bem o que fazer com eles) e algumas laranjas.

Espero conseguir ir lá em Janeiro para apanhar mais laranjas :)

These last few weeks back in Portugal have been crazy!! I haven't been able to write almost anything... Always busy with some stuff, good and bad, but taking away all my time and energy...

Nevertheless, last week I received an awesome package from Sweden, with great vegan candies, filled with cardamom&orange and dark chocolate&spices toffees! I received them because I was one of the lucky winners of this vegan candy giveaway. Tack :D


I immeaditly tasted them and it was surprising! They are both awesome in flavour and great in texture, but the dark chocolate ones are just divine!! They are my favourite and they are soooo smooth in your mouth and the blend of spices explode while the chocolate melts!! It was pure pleasure! I just couldn't stop eating them! I <3 them!! I just wish I knew the recipe :)

The wrap was also simple and beautiful and not sticky at all, like the "normal" toffees, that get stuck to everything, like your hands and teeth :p So, if you have time, go and have a look at the blog. It has great looks and the recipes are great, simple and sophisticated, plus they are vegan!

A few days later, I went to the south of Portugal, to Alfundão, for business and pleasure and I went to check my house there! We don't go there often, although I would like to, but we still manage to have about 10 fruit trees in our backyard, from lemon, orange trees to pear and pomegranate tree. They are organic for sure, they get the water from the rain, no pesticides, herbicides, chemicals of any kind and sun, lots & lots of sun!!

It was a great sight, the trees are so full of fruit! It was overwhelming when I looked at them! The fruit is so much that the branches, with the weight, bend down to the ground.


So we brought a lot of lemons (still thinking what to do with them) and a few oranges.

Hopefully, we will be back in January to pick up the oranges :)
