Pêssegos secos orgânicos?!! *Organic dried apricots?!!*

 Hmmm, ora bem, o que é que fazemos quando compramos pêssegos secos #orgânicos e não gostamos deles?! Fácil!! Doce :)

A semana passada comprei pêssegos secos orgânicos, porque queria adicioná-los aos meus pequenos-almocos e no entanto, apesar de o sabor não ser completamente horrível, a textura "borrachuda" não me convenceu de todo. Então decidi fazer doce! E ficou o máximo! Agora posso ainda comer ao pequeno-almoco, talvez não com os cereais, mas posso tentar com waffles ou torradas, ou então com iogurte ou talvez em alguma sobremesa, como um cheesecake mega saboroso!

Na verdade, adoro fazer doce, de tudo! Por causa da sua simplicidade, facilidade, óptimo sabor, o que dura na despensa, re-aproveitamento de potes de vidro, eu sei lá! É tão mas tão fácil misturar frutas ou vegetais, até cascas de frutas (coisas que normalmente metemos no lixo, se não fizermos compostagem), deixar ferver em água, adicionar acúcar, algumas especiarias e voilá, ficamos com uma coisa super saborosa e maravilhosa para melhorar os nossos pequenos-almocos, lanches ou até impressionar com uma sobremesa num jantar de amigos. Ou oferecer como presente! E claro, é uma óptima forma de reduzir o desperdício e evitar que a comida se estrague!

Aqui está a receita (Fiz metade, porque (só!) comprei 250 g de pêssegos secos orgânicos):

Ingredientes

500 g de pêssegos secos orgânicos
sumo de 3 limões orgânicos
1.5 Kg de acúcar (na verdade usei 300 g de acúcar mascavado escuro)
1 c. chá de canela em pó (mas pode usar-se carrdamomo, anis, ... - na próxima vez vou tentar com sementes chia)

Preparacão

1. Colocar os pêssegos, numa panela grande, com 1.5 L de água e deixar de molho durante a noite.

2. Adicionar o sumo de limão e colocar a panela no fogão e deixar ferver. Reduzir o lume, adicionar a canela e deixar, em lume médio-baixo, cerca de 30 minutos, até os pêssegos estarem macios e comecarem a abrir.

3. Retirar do lume e adicionar o acúcar, mexendo sempre até dissolver. Colocar no lume novamente e deixar ferver cerca de 20 minutos (fiz o ponto de fio, por volta dos 105 C, mas eu vejo a olho - e provo).

4. Transferir para um jarro previamente esterilizado e tapar com papel vegetal.

Eu costumo deixar na despensa e alguns doces aguentam 6-12 meses ou mais, mas assim que abro coloco no frigorífico. Mas depende muito dos doces, fiz um de restos de frutos silvestres e limão e está na despensa, aberto, há mais de um ano sem ter bolor!

Depois podemos enfeitar com rótulos todos catitas ou lacos e temos um óptimo, saboroso e útil presente de aniversário, natal ou até para o dia da mãe que aí vem!

So what do you do when you buy #organic dried apricots and you don't like them?! Easy!! Jam :)

Last week, I bought some organic dried apricots, because I wanted to add them to my breakfasts and despite the flavour was not at all terrible, the chewy texture did not convince me at all. So I did Jam! And it is great! Now I can add it to my breakfasts, maybe not the cereal, but I can try with waffles or toasts, or try them in the yogurt or maybe do some dessert, like an yummy cheesecake!

I actually love doing jam, of whatever! Because of it's simplicity, easiness, great flavour, long life shelf, re-use your glass jars, you name it! It is so easy to just mix fruits or veggies, even some fruits peels (things you normally put to the garbage, if you do not compost), boil in water, add sugar, some spices and voilá, you have a wonderful and tasty thing to improve your breakfasts, snacks or even impress with a nice easy in a dinner's friend. Or offer as a gift! And it is a great way to reduce waste and avoid spoilage!

So here is the recipe (I died half of it, because I add bought (only!) 250 g of organic dried apricots):

Ingredients

500 g of organic dried apricots
juice of 3 organic lemons
1 1/2 Kg of sugar (I actually used 300 g of light brown moscavado sugar)
1 tsp of cinnamon powder (but you can use cardamom, anise, ... - next time I will try with some chia seeds)

Directions

1. Put the apricots, in a large pan, with 1.5 L of water and let it soak overnight.

2. Add the lemon juice and put the pan in the hob and bring to a boil. Reduce the heat, add the cinnamon and let it simmer for about 30 minutes, until the apricots are tender and start to open.

3. Remove from heat and add the sugar, stirring until it dissolves. Put it back and let it boil for about 20 minutes (the setting point of sugar should be around 105 C, but I just check it by eye - and taste).

4. Transfer the jam to a sterilized jar and put some baking paper and cover it.

Usually I left in the cabinet for 6-12 months more or less, without any problem, but I put them in the fridge after opening. It depends a lot on the type of jam, I once did one out of berries leftovers and lemon and it is still open, in the cabinet, room temperature, for more than 1 year and it has no mold at all! Still tasty! 

You can do some nice labels, put some fancy bows and you have a great, tasty and useful bday, x-mas or even mother's day gift!

Resoluções de Ano Novo*New Year Resolutions*

Ano Novo... é como um botão de reiniciar à meia-noite e tudo começa do zero... é como uma página em branco num caderno novo... é como respirar pela 1ª vez... mas este ano não fiz grandes desejos, já fico contente se em 2015 acabar o Doutoramento, encontrar um trabalho porreiro e continuar a minha aventura (culinária) sem congelador!! Simples, vamos ver como corre :)

No entanto, tive uma experiência nova no final de 2014. O meu tio deu-me uma fruta vermelha "esquisita", em que o interior parece o interior do maracujá, mas é completamente vermelho por fora. Aparentemente, podia comer-se cru, e o sabor era bom, suave e um pouco parecido com maracujá :) "Googlei" e era tamarilho. Cresce em árvore e o meu tio até me disse que posso ter quantos tamarilhos eu quiser. Para experimentar, fiz um doce com eles, com um bocadinho de canela, cardamomo, açúcar mascavado e uma casca de limão orgânico (do Alentejo)! Tem um sabor suave e não muito forte, tenho de tentar com scones e talvez chá de jasmin. E agora tenho de pensar em novas e diferentes receitas.

Hoje, para começar de forma saudável o novo ano de 2015, fui ao mercado local, abastecer a despensa com tubérculos e legumes. Vou fazer sopas ricas em sabor e saudáveis ;) e ainda aprendi a entrançar as cebolas, com a ajuda da minha mãe :) Bonita decoração!!

New Year... it is like a reset button at midnight and everything starts over... it is like a blank page in a new notebook... it is like breathing for the first time... although this year I had no big wishes at midnight, I just wished 2015 to be better than 2014, so I will happy if I finish my PhD, find a nice job and continue my (cooking) journey without a freezer!! It sounds nice and simple to me, let's see how it turns out :)

Nevertheless, I had a new experience close to the end of 2014. My uncle gave me some kind of red "fruit", which the inside looked similar to passionfruit, but it was totally red on the outside. Apparently, it was ok to eat it raw, like that and the flavour was pleasant, a bit similar to passionfruit :) I googled it and it was tamarillo. It grows in a tree and my uncle told me he could give me as much as I wanted to. To try it, I did a jam with it, with a bit of cinnamon, cardamom, muscovado sugar and a bit of organic lemon (from Alentejo)! It tastes light and smooth, I have to try it scones and maybe jasmin tea. Now I need to think about different and totally new recipes.

So today, to start 2015 in an healthy mood, I went to the local farmers market, stock up with tubbers and veggies. I will cook tasty and healthy soups ;) plus, I learned how to "braid" the onions, with my mom's help mãe :) Nice decoration!!
