Bolo de aniversário & greves de transportes *Vintage bday cake & public transportation strikes*

No outro dia foi o aniversário do meu mais que tudo! Pedi-lhe para escolher um bolo que eu fazia e levava para o restaurante onde seria o jantar, o Máfia das Pizzas, que tem pizzas de forno em lenha. Esqueçam as opções vegan e se quiserem vegetariana têm de pedir para retirar ingredientes ... mas a massa da pizza e o sítio são bons. De qualquer das formas, ele pediu-me um bolo com macã ou ananás e eu pensei logo num bolo de ananás ao contrário!! Nunca tinha feito, mas acho o bolo lindo e arregacei as mangas e atirei-me ao trabalho! Fiz a receita daqui e alterei umas coisas... ;) Para a calda usei açúcar de cana integral e para o bolo usei açúcar amarelo. Como não tinha apple sauce, usei mel. Usei 2 cerejas que tirei de um bolo rei, porque não tinha mais em casa e usei ananás de lata (penso que o natural fica bem melhor, mas este não ficou muito mau). O resultado foi este:


O bolo estava um bocadinho doce de mais para o meu paladar, mas mesmo assim muito agradável de se comer. O ananás deixou o topo do bolo um pouco húmido e sabia muito bem! E foi bastante elogiado :)

Um dia destes decidi ir a Lisboa de transportes públicos (CP), por várias razões e devo dizer que foi deprimente... Apanhei com greve de transportes e serviços mínimos, que se traduzem num comboio de manhã, outro ao meio do dia e um ou dois à tardinha! Resultado, para Lisboa até tive sorte, esperei 10 minutos e depois fui num comboio sardinha-em-lata, mas consegui lugar sentada e até fui a ler o meu livro, coisa que já não fazia há uns tempos! Tratei dos meus assuntos e chego ao Rossio por volta das 12h... O comboio era só depois das 13h... sem comentários! Fui ao celeiro ver se complementava o meu almoço de 2 tangerinas do Alentejo com qualquer coisa e acabei por comprar uma empada de lentilhas óptima, vegan, que tenho de tentar fazer e uma empada de legumes, também muito boa. Almocei com esta vista fantástica para o Castelo de São Jorge e um sol lindíssimo!!


Depois, lá apanhei o comboio e cheguei a casa, não muito contente com o comboio e a greve mas feliz com as empadas!!

The other my love had his bday! I asked him to choose his favourite cake, so I could bake it and take it to the restaurant where we would have the dinner, the "Máfia das Pizzas" restaurant. They have pizzas baked in a wood fire oven, but forget vegan options and if you want vegetarian you have to choose the pizza and ask them to remove the unwanted ingredients ... but anyways, the pizza dough and the place itself are great. And either way, he asked to bake a cake with apple or pineapple and I immediately thought a vintage vegan upside down pineapple cake!! It was my first time doing it, but I like the cake so much, it is so beautiful that I immediately started the work! I did this recipe, with some minor changes... ;) For the syrup I used whole sugar cane and for the cake I used "yellow" sugar, quite common in Portugal. Since I did not have apple sauce, I used honey. I used 2 cherry's I took from a x-mas cake, because I did not have them at home and I used canned pineapple (I think that the fruit would be much better, but this one was fairly ok). This was the result:


The cake was a little bit too sweet for my personal taste, but still quite good. The pineapple added some moisture to the top of the cake and it tasted marvelous! It received a lot of compliments :)

The other I had to go to Lisbon by public transportation (CP), for several reasons and I must say it was depressing... There was a strike and minimum services, meaning that you would have only 1 train in the morning, another one at the middle of the day and maybe 1 or 2, if you're lucky, during the afternoon! So, I had luck in the morning, I only had to wait 10 minutes, I had a seat although the train was full and I managed to read my book, which was a thing I wasn't doing in a very long time! I took care of my business and I went to Rossio around 12 o'clock... Departure was after 13 o'clock... no comments! So I went to this organic, biological product shop, Celeiro, to see if I could had a thing more to my 2 tangerines lunch, from Alentejo and I ended up buying a lentils pie, vegan and very tasty, which I have to replicate at home and a veggies pie, also very good. I had lunch with this amazing and wonderful view of the São Jorge castle, in a beautiful sunny day!!


After that, I got the train and arrived home, not so happy with the strikes, but quite happy with the pie experience!!

Dia de natal *X-mas day*

Este ano recebi mais prendas feitas em casa! Adorei! Um pouco mais do que as compradas, visto que quem faz dispensa tempo, esforco e amor na elaboracão das mesmas! Também fiz prendas, um docinho de abóbora com nozes locais e de agricultura biológica, próprio para adocar um bocado de pão ou uma bolacha e acompanhar um chá aconchegante, durantes estes dias solarengos, mas frios das festas de natal e ano novo! Adorei fazê-lo e de certeza que voltarei a fazer prendas caseiras! Além de que recebi coisas que adoro, livros e utensílios de cozinha ;) mal posso esperar para usá-los, foram coisas giríssimas!

A minha contribuicão foi um bolo de limão com os limões que trouxe do meu quintal do Alentejo e estava óptimo! Com uma frescura de limão e um doce muito suave, dava vontade de comer sem parar :) Também fiz os palmiers recheados com doce de cereja (feito pela minha mãe) e o doce de restos de frutas, que eu fiz. A minha mãe fez o bolo de laranja da foto e está divinal!!! (Laranjas do Alentejo também! Hehehe)

This year I received more homemade gifts! Loved it! A little bit more than the ones you buy, specially because the person who does them spends time, effort and love while doing them! I also made some gifts, the butternut squash jam with local and biological walnuts, suitable for the sweeten the taste in a piece of bread or cookie and a nice cozy tea, during these wonderful sunny but cold days, during the x-mas holidays and new year! I loved doing it and for sure I will do again homemade gifts! Besides I received things I love, books and kitchen gadgets ;) I can't wait to use them, I received cool stuff!

I did a lemon cake with the lemons I brought from my backyard in Alentejo and it was great! It had a lemon freshness e a very light sweetness, you couldn't stop eating :) I also baked some jam-filled palmiers with cherry jam (Mum made it!) and the leftover-fruit jam, I did before. And my mum baked the orange cake in the picture and it was divine!!! (Oranges from Alentejo as well! Hehehe)

Bolo de casamento (vegan) para 40 pessoas e presentes de natal caseiros * (Vegan) Wedding cake for 40 people and homemade x-mas gifts*

Pois foi, consegui fazer o "Victorian sponge cake" (para o casamento) para 40 pessoas!! Foi uma loucura e um desafio, mas consegui :) Tive de fazer 5 bolos de teste antes e entretanto decorei a receita :) Mas valeu a pena, houve alguns "problemazitos" com o bolo mas tive excelentes comentários!!! :D

Tinha de ser um "Victorian sponge cake", sem discussão! E até é um bolo relativamente fácil de fazer. É só cozer o bolo, cortar em 2 partes e montar, com uma camada de natas batidas e calda de fruta. Soa fácil, certo?!! Naah, é quase, quase fácil :) É um bolo que funciona perfeitamente em formas redondas, para cerca de 12 pessoas, mas aumentar para 40 pessoas e qualquer coisa como 4 a 4,5 kg de bolo, não é trivial e é de ESPERAR alguns problemas!!

A "versão mini", foi um bolo de baunilha com calda de framboesas orgânicas entre as 2 camadas de bolo, feito anteriormente e levou cerca de 1/2 dia a ficar pronto, porque, desde o bolo até às natas batidas e a calda devem estar frios antes de montar. A "versão XL" para o casamento foi feita com 4 bolos rectangulares, que por sorte eu tinha 2 tabuleiros que iam ao forno a par, portanto só demorou cerca de 1 dia a preparar tudo

Desta vez, fiz o bolo a saber mais a limão e usei 8 limões no total. Claro que depois fiquei com limões e acabaram em doce :)


As natas batidas eram de soja e procurei por framboesas, mirtilos, arandos e morangos de produção local e orgânicos, que depois fiz em calda e juntei um bocadinho de vinho da Madeira para dar sabor!

Quando estava tudo pronto, comecei a montar as partes, os 2 bolos ao lado um do outro, em cima uma camada de natas batidas e uma camada de calda de fruta e, depois, cuidadosamente, coloquei o bolo do lado direito em cima! Desastre!! Colapsou imediatamente, o bolo rachou e só tive tempo de gritar pela minha mãe, para ela vir à cozinha e ajudar-me!! Que desastre, pensei!! Ela calmamente disse para eu respirar fundo, acalmar e juntar a outra metade do bolo, que ia ajudar a segurar... nope, também rachou, embora um bocadinho menos, mas um desastre na mesma! Então ela teve a ideia de cobrir tudo com as natas, que ia actuar como se fosse uma cola, disse ela!! Resultou, eu estava tão aliviada e comecei a adicionar frutas, espalhadas aleatoriamente em cima do bolo. Depois coloquei o bolo com mega cuidado dentro do frigorífico para o dia seguinte levá-lo para o restaurante! Eu podia dormir sossegada, pensei, mas eu estava inquieta, não sossegava! E fui espreitar o frigorífico e voltei a gritar pela minha mãe!!! O bolo estava cheio de rachas! O que é que se podia fazer?! Desesperei... Mas então tive a "brilhante" ideia de colocar umas espátulas de madeira de lado a segurar e as garrafas de água para apertar contra as paredes do frigorífico, para segurar tudo no sítio...ok, não foi uma solução perfeita, mas funcionou! ;)


Sobreviveu a noite no frigorífico, sem colapsar, a viagem de carro, o transporte para o restaurante (debaixo de chuva!) e foi uma óptima surpresa para os noivos!!


Ainda se viu uma racha! Mas era só uma, e eu fiquei contente! E o sabor a limão era fantástico! Ufffaa, eu pude finalmente relaxar! Portanto no fim consegui fazer o bolo, mas da próxima vez tenho de fazer de modo diferente, este bolo é muito pesado, especialmente nesta forma rectangular, para montar em 2 camadas.

Este ano as prendas de natal vão ser caseiras, com muito amor e produtos locais e orgânicos! Fiz compota de abóbora manteiga com nozes (e um pau de canela) e fiz uma etiqueta toda catita para oferecer aos meus familiares e amigos! E para mim, claro, fiz uma espécie de compota de sobras-de-fruta, com as sobras de framboesas, arandos, mirtilos e morangos (que sobraram do bolo de casamento) e anis. As duas compotas têm um sabor óptimo!


Amanhã vou fazer uma sobremesa com a  compota de sobras-de-fruta, vamos a ver como corre!! :)

So I had to bake a Victorian sponge cake (for a wedding) for 40 persons!! It was quite a challenge! But I did it :) It took me 5 trials though and I no the recipe by hard now :) Anyway it was worth it, the cake had some "issues" but great feedback!!! :D

It had to be a Victorian sponge cake! And they are actually fairly easy to do. You just bake the dough, cut it in 2 parts and assemble them with a layer of heavy cream and fruit syrup. Sounds easy, right?!! Nope, almost easy :) This cake works perfectly in a round shape for about 12 persons, but when you upscale it for 40 persons and something between 4 to 4,5 kg of cake, DO expect some problems!!

The "small version", vanilla flavoured cake and organic raspberry syrup in between layers, was made before and it took me half a day, but everything, from the cake to the creams and syrup has to be cool before assembling. The "bigger version" for the wedding was actually made with 4 cakes, but luckily I had 2 trays which fitted in the oven at the same time, so it took me about a day to prepare everything.

I did a more lemon flavoured version and I used 8 lemons in total. After that I had all these lemons and they ended up in jam :)


The cream was soya cream and I looked for organic, local raspberries, blueberries, cranberries and strawberries, which I then made a syrup with Madeira wine in the sauce!

When I had everything ready, I started assembling the parts, so 2 cakes next to each other, on top a layer of cream and a layer of fruit and I carefully had the cake on the up-right side! It immediately collapsed everything, the cake was all cracking and I just shouted for my mom, so she should come to the kitchen and help me!! What a disaster I thought!! She told me to breath slowly, calm down and add the next part on the left that it would help... nope, it cracked less, that was a fact but was still a disaster! So she had the idea of cover everything with cream, it would act like a glue, she said!! It worked, I was relieved and started adding some fruits on top. After that I put the cake inside the fridge for the next day, to take it to the restaurant! I could sleep now, I thought, but somehow I was uneasy! So I went to look inside the fridge and I shouted for my mom... again!!! The cake was full of cracks! What would I do?! It was when I had the "brilliant" idea of adding some wood spatulas on both sides of the cake and some water bottles, to hold them in place...ok, not a very great solution, but it worked! ;)


It survived the night in the fridge, without collapsing, the car transportation to the restaurant (under pouring rain!) and it was a very good surprise for the bride and groom!!





It showed one crack! Only one, I was so happy! And it tasted lemon wonderfully! Ufff, I could finally relax! So in the end I was able to do it, but next time I have to do it differently, this cake is too heavy, specially in a rectangular shape, to assemble in 2 layers.

This year x-mas gifts will be homemade, with love and organic, local products! I did butternut squash jam with walnuts (and a scent of cinnamon) and a nice label to offer to my relatives and friends! And for me, I did all-in jam, with the leftovers of raspberries, cranberries, blueberries and strawberries (leftovers from the wedding cake) and anise. They both taste marvelous!



Tomorrow I am planning a dessert with the all-in jam, let's see then how it goes!! :)

Limões&laranjas biológicos e mais concursos *Organic lemons&oranges and more giveaways*

Estas últimas semanas em Portugal têm sido de doidos!! Praticamente não tenho escrito nada... Estou sempre atarefada com alguma coisa, boa ou má, mas que me toma todo o meu tempo e a minha energia...

No entanto, na semana passada recebi uma embalagem fantástica vinda da Suécia, com doces vegan maravilhosos, caramelos de cardamomo&laranja e chocolate negro&especiarias! Recebi-os porque fui uma das sortudas que ganhou este giveaway de doces vegan. Tack :D


Desembrulhei logo tudo e provei-os e foi surpreendente! Os dois sabores são fantásticos e excelentes em textura, mas os de chocolate negro são simplesmente divinais!! São os meus favoritos e são tão suaaaves na boca e a mistura de especiarias simplesmente explode na boca enquanto o chocolate derrete!! Um verdadeiro prazer! Não fui capaz de os parar de comer! <3!! Eu só queria saber a receita :)

O embrulho era ao mesmo tempo simples e bonito e nada pegajoso, como os caramelos "normais", que se colam a tudo, desde as mãos aos dentes :p Por isso, se tiverem tempo, dêem uma olhadela no blog. Tem uma apresentacão óptima e as receitas são o máximo, simples e sofisticadas, além de serem vegan!

Alguns dias depois, fui até ao sul de Portugal, a uma terrinha chamada Alfundão, a trabalho e lazer e aproveitei para ir ver como estava a minha casa lá! Nós não vamos lá com muita frequência, apesar de eu adorar ir mais vezes, mas mesmo assim ainda conseguimos manter cerca de 10 árvores de fruto no nosso quintal, desde limoeiros, laranjeiras a uma pereira e uma romãzeira. São árvores biológicas de certeza absoluta, visto que são regadas quando chove, não têm pesticidas, herbicidas, químicos de espécie nenhuma e sol, montes & montes de sol!!

Foi uma visão espectacular, as árvores estão carregadíssimas de fruta! Fiquei sem fôlego quando as vi! A fruta é tanta nos ramos que, devido ao peso, estes dobram até ao chão.


Resultado, trouxemos carradas de limões (e ainda não sei muito bem o que fazer com eles) e algumas laranjas.

Espero conseguir ir lá em Janeiro para apanhar mais laranjas :)

These last few weeks back in Portugal have been crazy!! I haven't been able to write almost anything... Always busy with some stuff, good and bad, but taking away all my time and energy...

Nevertheless, last week I received an awesome package from Sweden, with great vegan candies, filled with cardamom&orange and dark chocolate&spices toffees! I received them because I was one of the lucky winners of this vegan candy giveaway. Tack :D


I immeaditly tasted them and it was surprising! They are both awesome in flavour and great in texture, but the dark chocolate ones are just divine!! They are my favourite and they are soooo smooth in your mouth and the blend of spices explode while the chocolate melts!! It was pure pleasure! I just couldn't stop eating them! I <3 them!! I just wish I knew the recipe :)

The wrap was also simple and beautiful and not sticky at all, like the "normal" toffees, that get stuck to everything, like your hands and teeth :p So, if you have time, go and have a look at the blog. It has great looks and the recipes are great, simple and sophisticated, plus they are vegan!

A few days later, I went to the south of Portugal, to Alfundão, for business and pleasure and I went to check my house there! We don't go there often, although I would like to, but we still manage to have about 10 fruit trees in our backyard, from lemon, orange trees to pear and pomegranate tree. They are organic for sure, they get the water from the rain, no pesticides, herbicides, chemicals of any kind and sun, lots & lots of sun!!

It was a great sight, the trees are so full of fruit! It was overwhelming when I looked at them! The fruit is so much that the branches, with the weight, bend down to the ground.


So we brought a lot of lemons (still thinking what to do with them) and a few oranges.

Hopefully, we will be back in January to pick up the oranges :)

Amigo Blogger Secreto :)

Há menos de um mês, aceitei o desafio lançado pelo blog Da nossa cozinha do "Amigo Blogger Secreto"


Dá-me oportunidade de conhecer novos blogues e ainda publicar mais uma receita :) sempre positivo!!

O meu Amigo Blogger Secreto, Orquestra de Panelas, é um blog com receitas fantásticas e vou tirar algumas ideias para mim e fazer algumas receitas de lá! ;) A receita que dedico ao meu Amigo Blogger Secreto é a de um Bolo de chocolate, com Vinho do Porto e recheado de natas de soja e calda de pêras. Foi uma receita que fiz para uma festa de anos de uma amiga e que quero repetir!


 Aqui vai a receita:


Ingredientes:

3 xícaras de farinha de trigo
⅔ xícaras de cacau em pó (usei orgânico, fairtrade)
2 colheres de chá de bicarbonato de sódio
½ colher de chá de sal
1 e ¼ xícaras de açúcar mascavado
2/3 xícaras de óleo vegetal
1 e ¾ xícaras de leite de soja
¼ xícara de vinho do Porto
2 colheres de sopa de vinagre de cidra

Prepara
ção:

1 - Pré-aqueçer o forno a 175º C. Untar uma forma circular de cerca de 20 cm.

Bolo:

1 - Misturar a farinha, o cacau, o bicarbonato, o sal e o açúcar numa tigela. Noutra tigela separada, misturar o óleo, leite e o vinho do Porto. Envolver a mistura líquida com a seca e mexer até ficar cremoso. Juntar o vinagre e mexer rapidamente (o bicarbonato de sódio começa a reagir com o vinagre).

2 - Despejar a massa na forma preparada. Levar ao forno cerca de 40 minutos. Retirar do forno e deixar arrefecer na forma durante 10 minutos. Transferir para um prato e cortar ao meio, por forma a ter 2 bolos.

Calda:

4 a 5 pêras grandes (usei pêra rocha), cortadas aos cubos
1 a 2 colheres de sopa de vinho do Porto
a
çúcar (mascavado) a gosto
água q.b. 

Numa ca
çarola juntar todos os ingredientes e deixar reduzir o líquido até formar calda em lume baixo. Mexer de vez em quando.

Cobertura:

1/2 tablete de chocolate preto
leite de soja q.b.

Derreter o chocolate numa caçarola anti-aderente e juntar um pouco de leite, cerca de 1 a 2 colheres de sopa. Mexer sempre até ficar cremoso.
 
Montagem:

Bater as natas de acordo com as instruções e barrar uma metade do bolo com uma camada "generosa". Colocar a calda (fria) em cima e montar a outra metade do bolo no topo. Colocar o chocolate derretido em cima e pode ser decorado com açúcar em pó ou o restante das natas.

Mercado, maçãs & teste ao bolo de casamento *Local market, apples & wedding cake tester*

Desde que cheguei ainda não parei! E além disso, constipei-me... sem comentários! Não é que esteja mais frio do que na Finlândia, mas por cá o frio é húmido, daquele que se entranha nos ossos e dói e as casas não estão tão bem isoladas... mas deu para ir ao mercado comprar uns legumes, plantados por agricultores da zona! Andei a ver e acabei por trazer duas abóboras manteiga, azeitonas pisadas (do Alentejo, nhom nhom), beterraba, beringela, castanhas, nabo, batata-doce, courgette, cebola, ... e tanta coisa boa!! Alguns dos legumes foram parar ao forno neste belo prato com seitan.



As abóboras vão ter outro destino, quero fazer creme de abóbora com laranja! Para experimentar! De loucos!!!


E entretanto, o meu namorado um dia chega a casa e diz que tem imensas maçãs a estragarem-se no frigorífico do trabalho. Digo logo para trazer umas quantas e fiz apple crumble e uma tarte de maçã escangalhada. Fiquei babada com os elogios e com um cheirinho óptimo a maçã e canela em casa ;)


 A boa notícia é que consegui fazer um bolo de casamento, versão de teste. Já tinha treinado antes, com cerca de 3 receitas diferentes, mas este ganhou, pela simplicidade, facilidade e sabor. Escusado será dizer que é vegan claro! É um "Victorian Sponge Cake", versão do Jamie Oliver (receita aqui). Mas o recheio foi totalmente diferente, natas de soja batidas e calda de framboesas, com vinho moscatel! 



Falsa modéstia, estava divinal!! Agoro tenho de fazer a versão XL que vai dar para cerca de 40 pessoas. (Este dá para 12-15 pessoas) :) Estou super entusiasmada! Se correr tudo como espero, a minha vontade de fazer bolos e vender ou abrir um café fazem mais sentido :)

E o livro que ganhei neste giveway finalmente chegou! Consegui ir levantá-lo aos correios mesmo no último dia, por pouco não era devolvido aos EUA. Já andei a desfolhar e tem receitas que são de babar! Já tenho umas quantas em lista de espera.

It has been crazy since I arrived! And besides, I got sick... so, no comments! It is not colder here than in Finland, but here we have this highly moist cold weather, the kind that gets into your bones and hurts a lot and plus, our houses are really terribly built for this cold... but still I managed to go to the local veggies and fruit market! I ended up buying two butternut squashs, "smashed" green olives (from Alentejo, nhom nhom), beetroot, eggplant, chestnuts, turnip, sweet potatoes, courgette, onions, ... and so much good stuff!! Some of the vegetables ended up roasted with seitan and rosemary.



The butternut squash will end up in a different way, I wanna try butternut cream soup with orange! Crazy, crazy!!!


Meanwhile, the other day my boyfriend gets home and tells me that there are tons of apples, going to a spoil in the work fridge. I immediately say to bring a couple of them e I did apple crumble and a de-constructed apple pie. I has so happy and embarrassed with the compliments and with a lovely smell of apple and cinnamon at my place ;)


 The good news is that I managed to do the wedding cake, test version. I had practiced before already, with about 3 different recipes, but this one was the winner, due to simplicity, easy to do and flavour. No need to say that is a vegan cake, obviously! It is a Victorian Sponge Cake, Jamie Oliver's recipe (from here). But the middle layer was totally different, soya whipped cream and raspberry "jam", with moscatel wine! 



If I may say so myself, it was divine!! Now I only need to do the XL size, for about 40 slices. (This cake is for 12-15 slices) :) I am super thrilled! If everything goes as I expect, my will to bake and sell them or even open a small cafe are closer :)

And the book I won in this giveway finally arrived! I managed to get it from the post office on the last day before being returned to the US. I had a quick pick and I drooled in a lot of recipes! I already have a waiting list.

Jantar de Natal com amigas *Pikkujoulu with friends*

A 19 de Novembro foi o pikkujoulu, com as meninas!! Este ano tivémos uma nova adição, que tem que ficar o apontamento que quando alguém novo chega ao grupo temos de explicar as regras! Mas foi divertido, muito! Como sempre :)

Entre todas as fantásticas prendas, houve uma de chocolate belga, orgânico e fairtrade e um livro que adorei!! Tinha concorrido a um giveaway, mas não tinha conseguido e já tava para ser adicionado à whislist, mas alguém foi mais rápido :)
Já me imagino a passar horas na cozinha a cozinhar coisas boas. Vou experimentar tudo!!!


E o jantar foi aqui. Surpreendeu-me pela positiva. Já conhecia o conceito de comida ao peso e adoro, mas o que me surpreendeu foi a variedade e qualidade/sabor da comida (por cá não há muitos restaurantes que eu diga que têm boa comida :/)

E hoje voo para Portugal, daqui a umas horas! Lixo na rua, louça lavada e frigorífico desligado! Até para o ano Helsínquia!!

Pikkujoulu dinner was on the 19th of November, with the girls!! This year we had a new addition, and we have to remember next time when someone new arrives to the group, we have to explain the rules! But it was fun, a lot! Like always :)

Among other fantastic gifts, there was some belgian chocolate, organic and fairtrade and a book I loved!! I had entered a giveaway, but didn't win it and I was thinking already to add it to the whislist, but someone was faster :)
I imagine myself already spending hours in the kitchen cooking all the good stuff. I will try everything!!!


And dinner was here. It surprised in a positive way. I knew the concept of "food-per-weight" restaurants already and I love it, but what surprised me was the variety and quality/flavour of the food (I cannot say that here exist many restaurants with good food :/)

And today I fly to Portugal, in a couple of hours! Garbage in the bin, washed dishes and freezer off! Helsinki, see you next year!!

Re-utilizar a receita da espécie-de-cheesecake para participar num passatempo de natal *Re-using kind-of-cheesecake recipe to participate in a x-mas giveaway*

O que aconteceu à espécie de cheesecake de manga? Estava óptimo!!! Mas ao fazê-lo sobrou um bocado de recheio e como tinha uma consistência mais de mousse de manga ainda enviei a receita para participar neste giveaway. O tema era o natal e consegui descobrir cá em casa um enfeite de pai natal :) Entretanto, o cheesecake e a mousse já acabaram :p

A receita é super simples e a base foi feita na Bimby, mas é possível fazer num liquidificar: 

Massa

150 gr de Manteiga
200 gr de All Bran flakes integrais
50 gr flocos de aveia integrais


Mousse/Recheio-de-cheesecake de manga (vegan)
Ingredientes
1 pacote natas de soja (de bater)
1 manga grande, feita em puré (usei cerca de 700 gr)
1 lata de leite condensado de soja
1 c. sobremesa de ágar-ágar em pó
6 c. sobremesa de água
manga ou chocolate para decorar
Preparacão
- Triturar a manga até obter um puré cremoso, no liquidificador.

- Bater as natas até ficarem firmes.
- Numa cacarola, ferver durante mais ou menos 5 minutos o ágar-ágar em água, em lume baixo, sem parar de mexer. Adicionar rapidamente o puré de manga e as natas previamente batidas.
- Dividar por tacas e colocar no frigorífico. Decorar a gosto.

So what happened to the kindo-of-mango-cheesecake? It was great!!! Anyway, while I was doing it, it was too much and a bit of cream was left-over at my place and since it resembled more mousse than cheesecake texture, I sent the recipe and decided to participate in this giveaway. X-mas was the theme and I managed to find here a x-mas pendent with santa claus :) Meanwhile, the cheesecake and mousse are over already :p

The recipe is super easy and the base was made in Bimby, but you can do it in a blender easily:

Base

150 gr of vegetable butter
200 gr of whole-wheat All Bran flakes
50 gr whole-wheat oats

Mango mousse/Filling (vegan)
Ingredients
1 package of soya cream (to whip)
1 big mango, pureed (I used about 700 gr)
1 can of soya condensed milk
1 tsp of ágar-ágar powder
6 tsp of water
mango or chocolate to garnish
Instructions
- Put the mango in the blender until you have a smooth cream.

- Whip creams until firm with peaks.
- In a small pan, let the ágar-ágar and water boil for 5 minutes, in low heat, always mixing. Ver fast add the mango and the creams.
- Divide and put in the fridge for a couple of hours. Garnish.

Comida "esquecida" *Food "forgotten"*

Como foi preciso cozinhar toda a comida que eu tinha no congelador, a comida que estava no frigorífico ficou..."esquecida"! E hoje teve mesmo de ser, a comida não aguentava mais sem ser cozinhada e claro, congelar não era opção :) Cozi ao vapor 1/2 couve branca, 1 beterraba, 2 cenouras, 1 cabeça de bróculos e 1 cabeça de couve-flor. Ficou assim!



Para o jantar vou fazer um molho de abacate-iogurte-e-grão para barrar no pão e comer com os vegetais ao vapor com um fio de azeite como acompanhamento!

Entretanto, ontem reparei que ainda tinha mais ou menos 1 kg de batatas, então foi puré de batata (e cenoura) para o jantar! Estava óptimo!!



A pressa é que este Sábado voo para o meu país e só volto à Finlândia em meados de Janeiro. Tenho de conseguir esvaziar o frigorífico até lá e deixá-lo desligado! :)
E ainda não sei o que fazer às cebolas... talvez amanhã me dê inspiração!!

Since I had to cook all the frozen food, my food in the fridge was put on hold... "forgotten"! And today was the final day, the food couldn't stay there any longer without being cooked and freezing it was not an option :) So I steamed it, I had 1/2 cabbage, 1 beetroot, 2 carrots, 1 broccoli and 1 cauliflower. This how it looked liked!



For dinner I will do an avocado-yogurt-chickpea paste and eat with bread and all the steamed vegetables with a drizzle of olive oil as a side dish!

Meanwhile, yesterday I noticed that I still had 1 kg of potatoes, so it was mashed potatoes (with carrots) for dinner! It was very tasty!! 



The rush is that I will be traveling this Saturday to my home country and only return to Finland on mid-January. I have to have an empty fridge by then and leave it unplugged! :)

And I still don't know what to do with the onions... maybe tomorrow the inspiration will come!!

Maçãs no chão *Apples on the ground*

Bem, ontem não houve post, mas houve um acontecimento engraçado ;)

Começando quando cheguei a casa depois do trabalho, tinha feito na véspera uma espécie de cheesecake de manga (e digo espécie, porque como não usei queijo creme, ficou com consistência de mousse, mas não estava mau!), para levar para o lanche em casa de uma amiga!


E quando voltávamos para casa, passámos por uma macieira (que eu nunca tinha reparado antes e que estava carregada de maçãs) e havia imensas maçãs espalhadas pelo chão. Ora, aqui na Finlândia não é muito comum ver pessoas a apanhar coisas do chão, mas estava escuro e a choviscar e que se lixe!! Apanhei uma para experimentar! Tinha assim um aspecto "esquisito", mas levei-a para casa, lavei-a e apesar de ser um pouco enfarinhada sabia bem! Meio ácida e fresca... fiquei com vontade de ir apanhar mais!!! :D




E relativamente à comida, (óbvio!) que ainda ando a comer restos, a sopa de ervilha acabou, passei para o caldo verde, uma das lasanhas também acabou e tenho ainda mais ou menos metade do arroz.
 ;)


Resumindo, ainda não precisei do congelador e nem me lembro que avariou.

Well, no post yesterday, but happened something funny ;)

Started when I got home from work, the day before I had done this kind-of-mango-cheesecake (and I say kind-of because I did not use cream cheese, so it ended up being more like a mousse instead, but the taste was not bad at all!), to take for a snack at a friend's house!


When we were returning home, we came across an apple tree (which I haven't noticed it was there before and it was full of apple) and there were tons of apples scattered all over the ground. So here in Finland is not very common to see people picking up things from the ground, but it was dark and rain-ish and what the hell, I didn't care!! I picked one up to try it out! It had a "weird" look, but I took it home, washed it and it tasted good! Kind of sour and fresh... I felt like going back to the place and pick up some more apples!!! :D




And regarding the food, (obviously!) I still have leftovers, the pea soup is gone, I am now eating the cabbage (Caldo Verde) soup, one of the lasagnas also finished and we have left more or less half of the rice, still. ;)

To sum up, I still haven't need the freezer and I don't even remember it's broke.

Receita de cupcake "bebâdo" e concursos *"Drunk" Cupcake recipe and giveaways*

Eu gosto de concursos! E de cupcakes!! E hoje decidi partilhar uma receita de cupcakes que fiz para uma das diferentes edições de uma festa da Sangria de uma amiga minha. Ao mesmo tempo, estou a concorrer a um giveaway deste blog. :D E os prémios incluem livros de culinária que ainda não tenho, o que dá sempre jeito a uma pessoa que acha que mais um livro nunca é demais!
 
O nome do passatempo é "A tua receita não me é estranha" e aqui vai a dita:
 
Para 12 cupcakes


Ingredientes

- para os cupcakes:
1 1/2 copo de farinha
1 colher (sopa) de fermento em pó
1 copo de açúcar (usei mascavado)
1 pitada de sal
2 colheres (chá) de baunilha em pó
2 colheres (sopa) de óleo vegetal
1 colher (sopa) de vinagre de vinho branco (ou cidra)
1 copo de água

- para a cobertura:
3 copos de vinho tinto
1 iogurte natural (usei de soja)
1/2 copo margarina vegetal
4 copos de açúcar em pó
1/4 copo leite de soja
2 colheres (chá) de baunilha em pó

- para a guarnição de maçã
1 copo de água
1 copo açúcar (usei mascavado)
2 maçãs
sumo de 1 lima

Preparação

- cupcakes:
Pré-aqueçer o forno a 180º C. Preparar 12 formas de cupcakes em papel ou usar formas anti-aderentes. Numa tigela grande, peneirar a farinha, o sal e o fermento em pó. Adicionar o açúcar e incorporar. Juntar os restantes ingredientes e misturar bem até obter uma massa homogénea. Encher cada forma cerca de 2/3 e levar ao forno pré-aquecido, sensivelmente 20 minutos, até ficarem fofos e dourados. Deixar arrefecer em cima de uma grelha.

- cobertura
Numa caçarola em lume médio-alto, deixar ferver o vinho tinto e reduzir até o equivalente a um copo, ficando com consistência de xarope. Reservar no frigorífico até arrefecer. Entretanto, numa tigela grande combinar o iogurte e a margarina e misturar na velocidade máxima até homogéneo. Baixar a velocidade para o minimo e aos poucos adicionar o açúcar em pó e a baunilha e no final o leite de soja. Com uma espátula raspar os restos das paredes da tigela e misturar em velocidade máxima cerca de 10 minutos (ou mais). Depois de frio, juntar o vinho e envolver bem. Com um saco de pasteleiro, cobrir cada cupcake e decorar com guarnição.

- guarnição
Numa caçarola pequena juntar a água e o açúcar e deixar ferver. Reduzir o lume e esperar que todo o açúcar esteja dissolvido e com consistência de xarope. Pré-aquecer o forno a 90º C. Cortar a maçã em rodelas largas e finas. Pincelar cada lado das rodelas com o xarope e adicionar um pouco de sumo de lima (para evitar que fiquem castanhas). Colocar as rodelas em papel vegetal e num tabuleiro e levar ao forno. Após 1 hora, virar e deixar mais 1 hora, até estarem secas.

I like giveaways! And cupcakes!! And today I decided to share a cupcake recipe I did for one of the many different Sangria party's editions hosted by a friend of mine. At the same time, I am entering this blog giveaway. :D Plus, the prizes include cooking books that I still don't have, which is handy, specially to me that I believe is never to much to own another book!
 
The name of the giveaway is "Your recipe is familiar" and here it is:
 
For 12 cupcakes


Ingredients

- for the cupcakes:
1 1/2 cup of all-purpose flour
1 Tablespoon of baking powder
1 cup of light brown sugar
1 pinch of salt
2 teaspoons of vanilla powder
2 Tablespoons of vegetable oil
1 Tablespoon of white wine vinegar (or apple cider)
1 cup of water

- for the frosting:
3 cups of red wine
1 soya yogurt
1/2 cup of vegetable margarine
4 cups of powder sugar
1/4 cup of soya milk
2 teaspoons of vanilla powder

- for the apple garnish
1 cup of water
1 cup of light brown sugar
2 apples
juice from 1 lime

Preparation

- cupcakes:
Pre-heat the oven at 180º C. Prepare 12 paper liner cupcakes or non-stick molds. In a big bowl, sift flour, salt and baking powder. Add the sugar and blend. Add the remaining ingredients and mix well together until you have a homogeneous mixture. Fill each cupcake about 2/3 of dough and bake, approximately 20 minutes, until fluffy and slightly golden. Cool down in a wire rack.

- frosting
In a pan at medium-high heat, bring the red wine to a boil and let it reduce until about a cup, until it looks like syrup. Cool down in the fridge. Meanwhile, in a big bowl combine the yogurt and margarine and mix at high speed until homogeneous. Lower down to minimum speed and add slowly the sugar and vanilla powder and at the end the soya milk. Scrap down the leftovers from the walls of the bowl and mix at high speed for about 10 minutes (or more). After cooled down, add the wine and blend well together. With a pipping bag, frost each cupcake and add the garnish.

- guarnish
In a small pan add the water and sugar and bring to a boil. Lower the heat and wait until all the sugar is dissolved into the water and looking like syrup. Pre-heat the oven at 90º C. Cut the apple in large and thin slices. Brush each side with the syrup and add a bit of lime juice (in order to avoid the browning). Put the slices on a baking sheet and take them to the oven in a tray. After 1 hour, flip and leave for another 1 hour, until they look crispy.
